We were served by Chef Paco himself, awesome guy and even better cook. Margaritas and tacos were amazing but his mom’s recipe for Flan was the best ever! Highly recommend

Our server Marvin was great. We had the steak fajitas and it delicious. The flan is a must here.
We had trouble finding the place, Google maps is not great giving 3D directions, but we were glad we kept trying lol.

Alebrijes by Chef Paco — A Hidden Gem on Fremont

If you’re anywhere near the Fremont Experience, Alebrijes by Chef Paco is the place you’ll regret not discovering sooner. We stumbled in not expecting much… and ended up finding one of the best dining experiences we’ve had in Las Vegas.

The food is phenomenal. Every dish is crafted with care, flavor, and a level of execution you don’t usually find in the middle of the Fremont chaos. The jalapeño margaritas alone are worth the trip—perfect balance of heat, citrus, and smooth tequila. Easily the best we had in Vegas.

The service is outstanding. Warm, attentive, and genuinely invested in making sure you enjoy yourself. It never felt rushed, never felt scripted—just real hospitality.

And then there’s Chef Paco himself. He’s not just talented, he’s a wonderful human being. He came out to talk with us, shared stories, and made us feel like guests in his home rather than customers in a restaurant.

I turned down dessert twice—twice!—but when Chef Paco insisted we try his mother’s recipe flan, I couldn’t say no. I am genuinely pleased I didn’t. It was unbelievable. Silky, rich, perfectly balanced… the kind of dessert that makes you rethink every flan you’ve ever had.

The biggest compliment I can give:
We went back a second time during a four‑day stay. That’s how good it was.

If you want excellent food, exceptional service, and a true hidden gem in the middle of Fremont, Alebrijes by Chef Paco is it.
