Amazing place , very friendly service and great food over all . Would highly recommend sitting at the bar that has the full menu. We sat at the bar and Bernie took care of us like if we were locals. Did not allow us to over order and made us some amazing drinks..

I booked reservations at Carbone at the Aria for our anniversary about a month in advance, knowing it would be extra busy during F1 weekend. There was no wait when we arrived, and we were seated right away in a really cute booth. Our server was incredibly friendly and had great recommendations.
We were on a bit of a time crunch because we wanted to make it to the race in time for the performances and driver parade, but the service was efficient without feeling rushed. The caesar salad was prepared tableside and was delicious, and our server suggested an off-menu option, the meatballs, which were also excellent.
The lemon drop martini was fantastic, and the spicy vodka rigatoni was absolutely phenomenal—I would come back again just for that dish alone.
Overall, we had a wonderful anniversary dinner. Great food, great service, and totally worth the visit—even on one of the busiest weekends in Vegas.

Meatballs were very under cooked. From the time the appetizers were brought to the main course of the Diana’s Ribeye was about 30min. By this time we lost appetite. Once it was brought steak was cold. Worst experience ever. Asked for a manager she claimed she didn’t know what going on in the kitchen. She sent the waiter to bring the ticket back and only gave credit for half of bill. She didn’t come back. I have visited 5 times and never had this poor service.

Very good dining experience that blends upscale steakhouse vibes with an old school Italian feel. The service was super attentive, offered good recommendations and coursing, and helped with picking some excellent wine and cocktail choices. You definitely need a reservation. The dress code feels like business/smart casual or more, but some people were a bit more casual. One great thing is that the staff helps you share and split apps and entrees so everyone can try. I would return.

Total disappointment. Waiter was condescending and made us feel rushed from the start. Took very little time explaining the menu and as such everything we ordered was so spicy…one dish had to be sent back.
Not close to what we experienced in NYC. Go elsewhere for Italian. Silly side note. The menus were so large it was hard to hold them at the table.

If you’re looking for a mid-tier food that is massively overpriced (even for Vegas) with an over the top (fake) atmosphere with pompous service, this is your place.

Overrated
food is ok. It’s Vegas so it is Over priced. My last visit the lobster ravioli were just ok. Lobster on top was chewy and over cooked. I also as forced to sit at the bar. I am in my 60s I have significant arthritis in ankles knees and hips. The his trip I had to bring my cane but admit I walked from park to aria as so close. I had requested a table for 2 behind the curtains in the back room I sat before as I knew the barstools could be an issue. I explained this and was told NO solo diners can ONLY make reservations at the bar. If trying to make one on your own it won’t even let you. My how typically handles my reservations. So sitting at the bar after the short walk my knee felt iffy but ok. Before my salad came out I went to go to the restroom and getting off the stool caused my knee to buckle and hyper extend. I hobbled to the bathroom and cried in pain and frustration. I had to take a pain pill which now meant I could not drink. I don’t even think I ate my salad which is my favorite.
The only at the hosts treat guests is not great. No smiles. No accommodations for disabilities like mine (not in wheelchair) not all disabilities or painful conditions are visible. Sorely disappointed to say I will not be returning.

If I could give this place 0 stars I would. This place was definitely a one and done.
My family and I dined at Carbone on 11/11/25 and it was one of the worst experiences from start to finish.
This was our family’s first time dining at a Carbone. We are from Miami and heard several mixed/bad reviews about the two locations there, so we figured we would give the Vegas location a shot & form our own opinion.
From the moment we walked in, the 3-5 hosts were less than enthusiastic about greeting us and chit chatting amongst themselves.. I’m pretty sure one or two of them were sitting on their phone.
Once we were sat, we weren’t greeted by any server or staff member (even with just water) for at least ~25 minutes.
Once our server finally came over, he seemed pretty flustered & all over the place. We honestly weren’t sure why, considering we were one of the last reservations of the night.
My fiancé went to order the Caprese salad when the server told us they were sold out? He said they ran out of tomatoes? I have never in my life heard of a restaurant running out of simple ingredients. I thought that was bizarre.
We all ordered cocktails and our meals. Then we waited for about 30 minutes to receive our cocktails. The bar seemed less than busy so we were pretty confused why they took so long, yet we all remained patient. However, we all collectively thought it was strange how our main dishes started to come out…
We were a group of 6. The first 3 dishes came out. Then 20 mins later, the second 2. And then I sat waiting for mine, which was last. I had ordered the spicy rigatoni that the server mentioned was one of the dishes they were famously known for.
Once everyone else had their food our server looked at me and said: “the chef did not like how the spicy rigatoni came out so they were firing a new one” I was so confused but figured no problem.
Well I waited about 30 minutes or more for my dish. At this point, our entire group was finished eating and I had not even received my meal…..which arguably could be one of the easiest dishes I thought a restaurant could make. Pasta and sauce….
The server asked the group if we wanted another round of drinks and only one of us said yes. Yet, that second drink never made it to the table, the server had completely forgot and at this point we were all pretty much ready to leave.
All in all, I recommend not wasting your time at this place, considering how outrageously priced the dishes are and how poor the service was. The food was just alright. Nothing that stood out or made any of us want to come back.

We had reservations at 5 when they opened. We were 4th to check in out of about 15-20 groups. And guess who they sat last? The host needs to figure that out because it put us in a crap mood. The food was okay. The service was great. Way over hyped and priced.
