Carbone Aria was quite a disappointment. The service was friendly but they lacked in providing an experience worth the money. Our entire table didn’t really love the drinks. The options they had were tolerable in terms of cocktails but nothing special. The food, pacing of dinner, and atmosphere is where they dropped the ball. Between courses took way too long and the ribeye was served cold and slightly undercooked. We requested medium and got medium rare and as soon as it hit the table it was room temperature. The spicy rigatoni was delicious and so was the praline cake for dessert. The meatballs that we added to the pasta were $10 a piece and were so tiny and lacked flavor. Carbone Aria was not impressive at all and still had a hefty bill. In terms of atmosphere it was weird to hear r&b and rap music at a high level Italian restaurant. Hopefully they change some things for their future clientele

Carbone had been on my list for a long time and while the experience and service absolutely lived up to the hype, the food unfortunately left me wanting a bit more. From the moment we arrived the service was incredible, our waiter was enthusiastic, explained everything in detail and made us feel genuinely welcome. The ambience is classic Carbone: dark, lounge-style, dim lighting and very “Vegas” in the best way.

The complimentary bread was great, and the huge block of parmesan with cured meats and cauliflower was an interesting touch. We started with the Caesar salad prepared tableside, which was a fun experience, but it ended up far too salty. I think the server got a bit distracted while chatting and overdid it. The calamari/baby squid was fresh and tasty, but nothing particularly memorable.

For mains we had the famous vodka pasta. It was nice and well cooked, and yes I’d eat it again, but I honestly don’t understand the hype. To me it felt like a good tomato pasta with cheese rather than something unforgettable. The standout of the night was the truffle ravioli. The truffle was brought out fresh from Italy and it tasted incredible, easily the best part of the meal and the saving grace of the evening. That said, at nearly $200 for the dish, I expected the pasta itself to be just as impressive as the truffle.

Overall it’s a great place to experience and tick off the Vegas restaurant list, especially for the service and atmosphere, but for such an overhyped spot I expected the food to be better.

Totally ruined our night. Called in that we would be late, got confirmation that it was okay, and they still gave away our table. Terrible handling by the personnel.

Couldn’t wait to try Carbone. Had to fly all the way to Vegas because the one in NYC is impossible to get into. It def lived up to the hype. 8.5/10

I went into Carbone with an open mind, but at the end of the day the prices do not justify the food you’re getting. The pasta is pretty basic and the carrot cake dessert was just okay. The bread they brought to the table was probably the best part. We also liked the carpaccio. The service was phenomenal.

We were a party of 9, they gave us a 2 hour dining limit, sorry, rude unprofessional service. Very rushed. They came and told us we had 15 minutes left before we had to leave and hadn't brought our entrees. We had to have our food sent to our suite. This is the most over rated, unprofessional restaurant. Went to Prime the next evening, stellar service, excellent food and no attitude.

The atmosphere in the restaurant was amazing, the lighting, the decor, everything was perfect. Our waiter was very friendly and conversational which was nice, he gave us recommendations, made some jokes, and was overall very pleasant. The bread was delicious, the garlic bread was definitely my favourite. The other appetizers were decent, nothing too memorable in my opinion. The main dish was nice, I shared a couple dishes with my group and they were all great but nothing mind blowing. Still one of the best Italian restaurants I have been to.

Amazing place , very friendly service and great food over all . Would highly recommend sitting at the bar that has the full menu. We sat at the bar and Bernie took care of us like if we were locals. Did not allow us to over order and made us some amazing drinks..

I booked reservations at Carbone at the Aria for our anniversary about a month in advance, knowing it would be extra busy during F1 weekend. There was no wait when we arrived, and we were seated right away in a really cute booth. Our server was incredibly friendly and had great recommendations.

We were on a bit of a time crunch because we wanted to make it to the race in time for the performances and driver parade, but the service was efficient without feeling rushed. The caesar salad was prepared tableside and was delicious, and our server suggested an off-menu option, the meatballs, which were also excellent.
The lemon drop martini was fantastic, and the spicy vodka rigatoni was absolutely phenomenal—I would come back again just for that dish alone.

Overall, we had a wonderful anniversary dinner. Great food, great service, and totally worth the visit—even on one of the busiest weekends in Vegas.

Meatballs were very under cooked. From the time the appetizers were brought to the main course of the Diana’s Ribeye was about 30min. By this time we lost appetite. Once it was brought steak was cold. Worst experience ever. Asked for a manager she claimed she didn’t know what going on in the kitchen. She sent the waiter to bring the ticket back and only gave credit for half of bill. She didn’t come back. I have visited 5 times and never had this poor service.

Very good dining experience that blends upscale steakhouse vibes with an old school Italian feel. The service was super attentive, offered good recommendations and coursing, and helped with picking some excellent wine and cocktail choices. You definitely need a reservation. The dress code feels like business/smart casual or more, but some people were a bit more casual. One great thing is that the staff helps you share and split apps and entrees so everyone can try. I would return.

Total disappointment. Waiter was condescending and made us feel rushed from the start. Took very little time explaining the menu and as such everything we ordered was so spicy…one dish had to be sent back.
Not close to what we experienced in NYC. Go elsewhere for Italian. Silly side note. The menus were so large it was hard to hold them at the table.
