One of the best dining experiences I have ever had in Las Vegas! From the atmosphere to service, Carbone was incredible and exquisite! I will definitely be coming back to this restaurant to try other items on the menu. I highly suggest checking out the desserts, especially the cheesecake.

We had a really wonderful experience at Carbone last night. Dion was our server and we hit it off with him from the start - his recommendations were top notch and his attention to detail was impeccable. He is what made our night really great, alongside the waitstaff supporting him!

I will say, front of house service was a little to be desired and everyone was a little stiff/rude at the check-in desk. But back of house more than made up for it.

the spicy vodka rigatoni was exceptional šŸ˜ the chef made a great ceasar salad at the table side as well, it was a little heavy on the garlic but still delicious. drinks were phenomenal and the staff/service was great and very accommodating. they ended up taking a dish off of our bill due to the wait time which was appreciated.

Just so you know.. they won't seat you until your entire party arrives. So, don't be surprised if they won't seat you.

Anyway, when everyone finally arrived, we were taken through a maze of different rooms until we finally took our seats in a dimly lit area, adorned with lovely, red velvety curtains. This location is about 2500% bigger than the one in NYC.

The service was tight, but I'd say that our server could've turned it down about 25% to less talky. Otherwise, nice professional staff that included at least three different members catering to us.

With three in our group, we started with drinks.. a Spicy Margherita, a Cosmopolitan, and I ordered a wonderful medium bodied glass of Cabernet, before originally tasting an even more outstanding and full bodied one, that was over $70. I settled for the $40 glass which was still absolutely delicious.

The menus were very large for the amount of writing that was on them.

As a starter to the table they sent us a basket of different breads, with focaccia, toasted garlic, and a nice sesame seeded semolina, all of which were outstanding. Also complimentary, was a plate of capicola/salami, which went well with the breads.

We added nine baked little neck clams that had three different styles. A classic oregonato, which tasted fine, but maybe a little drier than expected. The other was a clams casino style, then there was my favorite.. the raw one, which tasted best to me overall. With a squirt of lemon onto a decent amount of meat, these clams were delicious.

We shared the prosciutto with melon, which included both cantaloupe and honeydew. Melons were sweet and the prosciutto succulently salty, making for a delicious combination.

We shared a deliciously crisp Caesar Salad and a Spicy Rigatoni Vodka, that was cooked to perfection and very easy to just devour. I included an order of the broccoli rabe, which was possibly the best I've ever had.

We were too full for dessert, but enjoyed a coffee to help us stay up for a little bit of midnight gambling. The desserts looked great and were probably as delicious as everything else was. Pricey, but delicious.

Our waiter was nice, too much noise everyone was shouting I dont know why hahaha, I couldn’t tell if there was music or no. Food was fantastic!

A Disappointing Dining Experience

I walked in with high expectations, only to leave with disappointment. I took my wife and mother out for what was supposed to be a nice dinner.

The issues began right when we placed our order. We wanted to try a variety of dishes to sample different flavors, including their signature Porterhouse steak. I asked our server about the portion sizes to make sure we weren’t ordering too much. Instead of giving a clear answer, he insisted we also order his personal favorite—the New York strip—despite my concerns about the quantity. He reassured me it wouldn’t be too much, so we agreed.

After taking our order, the server essentially disappeared. He spent most of the evening chatting with another table, who seemed to be his friends, and never once checked in to see if we needed anything. In a fine dining restaurant, attentive service is expected, but that was not the case here.

When the food began arriving, support staff practically tossed the plates onto our table without a word. To make matters worse, my mother’s chair wobbled the entire time. I initially thought the floor was uneven, but it turned out one of the legs was simply shorter. When I told the server, he casually told us to switch chairs ourselves. I suggested he do it, and while he eventually swapped it with a nearby chair, he left the broken one sitting there.

As for the food—appetizers and bread were fine, but the pasta was unimpressive. Both the Porterhouse and the New York strip we ordered medium came out closer to well-done, dry, and difficult to eat. The server never asked if the steaks were cooked to our liking and never checked in after they arrived. The portions were enormous, far more than we could eat, and he didn’t even ask if we wanted more wine. He was too busy talking to the other table, who, I later noticed, were apparently well-known, as several staff members were taking photos with them.

We ended up barely touching the steaks and had to wait quite a while to get them boxed to go. He didn’t even ask if we wanted dessert. By that point, we just wanted to leave.

The bill came to over $700. I’m normally a generous tipper, but for the first time, I questioned whether the server deserved anything at all. Out of basic courtesy, I still left $100.

As someone who frequently visits Las Vegas to enjoy great food and has dined at many restaurants, this was by far one of the worst dinners I’ve ever had.

Always a great great meal fantastic atmosphere tremendous service. We were fortunate enough to get the Dynamic Duo, Chris and Keith that were spot on with everything that we needed was fortunate to get the chicken Parmesan that is an off the menu item been coming here since they open, never disappointing mealappreciate the cauliflower, salami and cheese along with the fabulous breads that they bring to you as soon as you sit down and meal, as always was exceptional fantastic vibe at this go to location

overly-priced for extremely mediocre food. long wait even with a reservation. the service was the only thing that was actually good and the servers at least seem very knowledgeable, however the food is just definitely not worth the price… i mean what a disappointment. i thought you couldn’t go wrong with a classic spaghetti and meatballs. BOY was i wrong. cocktail menu was also not impressive with only basic cocktails on the menu. the point of a cocktail menu is to have drinks on there that aren’t classic cocktail because if that’s what you want, you’ll order it either way on or off menu. wouldn’t recommend. so many other restaurants near that i’d rather spend money at.

This was one of the worst restaurant experiences that I’ve ever had in Las Vegas. The service was terrible. The food wasn’t hot especially their special pasta the carbine pasta. We didn’t get drinks for 45 minutes. They left dirty plates on our table after being done with food and argued with us when we asked our clean plates for our salad after having seafood and other remnants on our plate. They said we should only get one plate for all the courses before the salad. The main part of the restaurant feels like you’re in a low end restaurant. The back room is a little nicer. I would never recommend anyone waste their time going and eating at this restaurant when there’s so many better options in town. Not worth the price at all.

Quite possibly the worst meal I’ve ever had in Vegas. $1900 lit on fire. Do yourself a favor and just go to Sinatra at Encore.
