Soyo in Las Vegas had tasty Korean-style side dishes and good anju like gopchang hot pot, half & half chicken, and tteokbokki. It felt more like a pub than a typical Korean restaurant, but the food was enjoyable and it was a nice spot to spend a Friday night out. Kimchi was not my favorite 🥹

I decided to grab some late night Korean food here with friends - family style with small dishes to share. Service was pretty fast, I was greeted and sat down immediately in the booth section when we arrived (party of three). You can order off the small little ipad machine on the table. So for almost 25 years I never ate Korean, true Korean food unless it was Korean BBQ (which I love). I'm south Korean and Irish, and now that I know that we Koreans have some of the best food on the entire planet, everything here is sublime. The short rib stew (comes with rice you can either eat separately, or dip/pour into the stew) is probably hands down the best thing I've had in my life second to Foie gras and bone marrow.
