Clarified with the waitress today that all 3 Noodle Man locations have the same owner, but the Spring Mountain location has an extended menu. Pictures of the Ft. Apache location menu are attached. Fried Pork Dumplings: star of the show, delicious and juicy, added some soy sauce to the chili oil and dipped the dumplings inMongolian Beef Noodles: thick knife cut noodles with onion and slice beef, great flavor and chewy noodles, could have used more beef thoughSpicy Sichuan Wontons: wontons themselves were good, but the sauce was too sweet and sour missing the umami flavor, hardly spicyCucumber Salad: fresh and crunchy, but again too sweet

I have to say I've been to all 3 Noodle Man's by now. The one at Rainbow is the most similar to this one. The other one by Spring mountain does not have hand toss noodles. They have a different menu. They have more cantonese food which was also really good. I do like all the Noodle Man. I came across this 3rd one after going to Sally's hair supply. It was right next to it. So I came here the next day. I ordered the shrimp thick sliced noodles. It was really good. I can honestly say that my favorite hand toss thick noodles to eat are at Noodle man and Magic noodles. They are both good in different ways. They have different noodle flavors, but both so good. I will say that I like the thick noodles the best at Noodle men because the noodles are thicker and more doughy. I like them like that! Service was really good and it is just less hectic than Magic noodle, and you don't have to wait an hour each time you want to go. The price point is also good and the place looks very clean. I will for sure be back every time I am in Vegas. This is my new favorite spot!

Great spot with the friendliest waitress. Noodles have the right consistency and excellently flavored. We ordered 4 different dishes, and all were fantastic. Highly recommend the beef soup with knife cut noodles. Very tender beef with little to no fat. Dumplings were also good. We will definitely go again when time permits.

I walked in and ordered wonton soup and street noodle soup. I was disappointed to find that the food wasn’t fresh. The soups were very bland. I had to add a wealth of seasonings from home. And to my surprise, there was a bug in my soup. I ordered 2 because I’m not feeling well and was hoping to eat the other one tomorrow but honestly I am afraid to open it. I called to let the restaurant know and the person didn’t understand what I was saying. They want me to come back to the restaurant because they didn’t know what I was saying. Unfortunately I work at night so I’m not able to return. The restaurant was empty, no wonder why! I stopped by here because pho king was closed. I will just starve next time. No stars and I wish I didn’t tip them

This a nice little restaurant off Fort Apache! We came here for dinner on a Friday night and it wasn't very busy. The waitress was very friendly and the service was very quick. She would constantly come by to ask if we needed anything as well which was very nice of her! We ordered the dumplings to start followed by the shanxi noodles and hot and sour rice noodles for our main course. The shanxi noodles was my favorite! The noodles had a chewy/soft texture which I really enjoyed. The broth was flavorful as well. The hot and sour rice noodles was okay to me. The broth seemed to have too much oil for my liking. Definitely give the shanxi noodle a try!

This place is a hidden Jem. We loved it. It was our 1st time in. The restaurant was adorable and very clean. We loved the atmosphere. We were greeted immediately apon comeing in. Our waitress was Gia. She was very sweet and attentive. Very quick to remove stuff from the table and kept our waters full. ( the only down side of this place is not fountain drinks it's in a can a very small thing considering how amazing it was) I loved everything we ate. The pot stickers were made fresh in house! They say they makes their noodles too, and O. M. G.! I loved every bite. This place made me fall back in love with Chinese food. I have been disappointed so much lately and this place brought me back. I can't wait to go again. Be sure to try the cucumber salad as well!

Stopped in for quick lunch. First time. Was greeted by friendly young lady and seated. Asked what was popular and she immediately suggested item. She asked if I wanted spicy but settled on mild. Also asked for small cup of soup which came out first, fast and hot. Meal was very tasty. Noodles were delicious. Drink selection was limited but the food made up for it. They were also busy with take out and delivery (Grub Hub). Multiple locations around town.

I'm a restaurant owner. Went in last night . Was afraid because the Magic Noodle across the street was packed and this place only had 2 tables. Well I'm here to tell you the chow main was fire and my kids pork soup was on point. Service was good. I'll definitely be back.

We came around dinner time on a weekday and did not have to deal with a crowd/wait like at their Rainbow/215 location. Unlike their Rainbow/215 location, this restaurant is spacious and can accommodate bigger families. We ordered the Beef Pancake, the Mongolian Beef Noodle, and the Shanxi Noodle. Everything came within 5 minutes of our order being taken. Beef Pancake - Came in 4 pieces and the pancake part was chewy. The meat was also lean. This paired well the the spicy sauce and soy sauce. We give it a 4/5. Mongolia Beef - It was pretty greasy. The beef was slathered in oil and there were parts of the beef pieces that were fatty. It's definitely not one of their healthier options; however, it was delicious and their knife-cut noodles paired well with the beef and vegetables. If you don't like overly greasy food, avoid this one. We give it a 3.5/5. Shanxi Knife Cut Noodles (Signature Noodles) - This was the highlight of everything we ordered. The pieces of stewed beef in the soup was tender and fell apart when you picked it up, meaning it was cooked just right! The meat was also more on the lean side, so there weren't too many bits of fat I had to separate out. The broth was light yet flavorful, and there was a fair amount of the knife-noodles. I was even able to take this as leftovers because it was filled with so many noodles. I give this a 5/5. Service was also attentive. The waitress filled our water multiple times and took away any empty plates within seconds after we cleaned it. We will definitely be back.

My partner and I decided to stop by this place for lunch after we found out that the Magic Noodle across the street had a long waited line. We ordered two items: the Shanxi beef Noodle Soup (their signature dish), a fried chicken with a bowl of rice and a Thai tea. The fried chicken was crispy but the sauce on top of it was salty. The beef in the noodle soup was tender, well cooked, and flavorful, however, the noodles was a little mushy and thick. I don't usually like my noodles with this kind of texture so it wasn't what I expected but overall it wasn't completely bad. We received good service and love that this is a mom and pop kind of place. A good option to try if other places in the areas are busy.

I haven't actually tried the food yet because it is being prepared. I want to comment on the nice interior. I like the design AND it has nice personal touches such as 2 cool VW bug van models. Also, their tv is playing fun and beautiful wildlife videos.

This place wasnt much to impress me. The food was so-so and the staff seemed a bit unwelcoming. I dont think it would be worth to make a second visit there to try the other dishes. I feel like the flavor lacks the kick to be really good.

Great food. I've had both dine in and take out service and both are efficient. Of course, the food is delicious. I love ordering a noodle soup and splitting it with someone else who orders a dry noodle dish, then sharing some cucumber salad. They make a great, fresh cucumber salad here! Very tangy and saucy but the cucumbers still have a good crunch.
