My wife, son and I were traveling the backroads of the Catskill lowlands the other day and needed something to fill our bellies. While stopped at the traffic light in Cairo, NY we spotted a sign saying 2 MINUTE PIZZA here. Hmmm, 2 minutes, this I gotta see. Pulled in, parked and was standing at the window in short order. My son wanted a pepperoni pizza, the wife – just a plain with extra cheese and me – sausage, mushroom and olive please. We ordered our drinks and sat down on comfortable wrought iron chairs and tables. Yep, 5 minutes later the first pizza was yelled out. So probably 3-minute prep time and 2 minutes in this oven. I’m stilled amazed. Now my son is finicky when it comes to cheese. For him it’s yellow cheese or nothing. The pizza came out with white mozzarella cheese. We told him to try it, he did, he smiled and ended up eating the whole 14” diameter pie. My wife then had to order one just for herself. Mine came up shortly thereafter and I must say the mushrooms were divine and olives were exquisite with just a touch of saltiness. Hmmm, I wonder if they have sardines. So, in the end I couldn’t stop wondering with such fine artisan pizza here why was this place empty. Our final bill for 3 pizza’s and drinks came to around $40 which I think is a steal. I’ll be back with a busload of senior citizens I yelled as we left . . .
