We heard such good things about this place. Unfortunately, we didn't get a chance to experience any of it. Four of us were seated, given menus and chips and salsa. Server never even came back for a drink order. We waited and waited and walked out. Not busy at the time we were there.

I should have written this review some time ago—Cowboys Tacorea in Cobleskill has been one of my absolute favorite spots for authentic Mexican food for a long time. Every visit is consistently delicious, and you can tell they put real heart into every dish. From perfectly seasoned tacos to their amazing burritos and salsas, everything tastes homemade and full of flavor.
The staff is always welcoming, the service is fast and friendly, and the atmosphere is cozy and laid-back. Whether you're grabbing takeout or sitting down for a meal, it always hits the spot.
If you haven’t tried Cowboys Tacorea yet, you’re seriously missing out. Cobleskill is lucky to have a place this good. Five stars all the way!
