“We spent the weekend visiting cideries in the Finger Lakes. Found IBC by chance in a search. This was the best cider by far. The venue is an old barn, the folks who run the place (Richie) greeted us warmly along with Ash, an enthusiastic and adorable Australian Shepherd who is living his best life hanging with the people and hiding bones.
The cool part about their product is how they source their apples—foraged or harvested from old orchards that they maintain in partnership with landowners in the area. Today I had the Amongst The Brambles, a cider made with blackberries. They told us that it is the sweetest of their ciders, but it lives at the intersection of dry and the very driest of semisweet. It is crisp, fruit forward, and has the kind of pleasant tartness and clean finish that makes you want to enjoy another glass.
The welcome area and bar is cozy, but when you wander toward the back of the 19th century barn you find this amazing space filled with antiques and comfortable couches and an ancient copy of the Moosewood cookbook and sunlight filtering through the cracks between the barnboard walls. Between all that and the chickens in the back yard, the effect is magical.
This is the perfect place to hang out, chat with the owners, play with the dog, and enjoy excellent local hard cider. We’ll be going back. I was disappointed that their T-shirts were sold out, but they had some cool stickers to offer (free). If you are in Ithaca, make an extra stop. You won’t regret it!“
