To begin, this is not the same restaurant from before the closing. The menu has been changed entirely, and unfortunately not for the better.
The menu is packed with fancy ideas that sound interesting. The plating looks nice, but the execution falls flat. The prices are on par with upscale options in downtown OKC, but neither the atmosphere nor the quality justify that.
There is no drink menu. House sake is only served by the shot. The sushi menu has a handful of house rolls, but nearly none of the standard classics. Rather than wasabi and pickled ginger, sushi rolls were served with picked sugar beets. Spicy tuna was packed with extra options that sound trendy but mostly took away from the roll. The panko crumb frying does have potential at least.
The staff is nice enough, but things were disorganized. Issues such as sake serving size weren't mentioned until after service.
Didn't get around to trying fried rice or desserts, but the sushi and pickle plate were just unimpressive enough that I'm not inclined to go back and try. There are better options on site.
Unfortunately this ended up being the most disappointing sushi I've had all year. Soto used to be more organized, had a good mix of classic and unique menu items, and the unique options were actually good. Now it seems like nothing but a gilded hot mess.

We loved Soto. We tried many different dishes and loved them all. Our server, Sadie, was awesome. The head chef even came out to chat with us. These guys have it figured out! We had zero expectations for the restaurants in the casino, since it was just an overnight hotel for us on a road trip, but they knocked our socks off!

Place just opened after Covid and WoW. It looks very nice inside. Service was excellent from the moment we walked in to when we departed. They had nice modern upbeat music playing in the background. All the staff were attentive, friendly, and courteous. Everything we ordered was excellent, you could taste the quality and each dish was a work of art to view and explore the rich flavors. We had an amazing dinner here and will definitely be back soon.
Parking: Plenty of free parking with multiple entrances.

If I could give 0 to negative stars I would. I've been here since Wednesday and here it is Saturday. It is still closed with a sign open Wednesday to Saturday 5pm to 9pm to go only, but Thursday they were closed with people eating insidewith?! I leave on Monday May 23rd and I've been wanting to eat here to no avail.
Great food
Best sushi around!

I like the hot green tea pot stickers and smoked salmon sushi mm
Sushi was delicious and Chef Claxton is very talented and professional in his art of Sushi. Will share with family and friends!
Great Sushi!!! Will definitely be back!
If I could give it negative stars I would. Most places serve sushi on rice, it helps fill and the taste is plain as to not overpower the fish, but this place serves everything on a thick bed of carrots... carrots. They are thick, the texture ruins the sushi and the taste completely overpowers the food. It’s like a little kids version of what they think sushi is. Having said that the eel is very good.... just please stop with the carrots!
Seriously good. They do not mess around with making top quality sushi. Eating here is not a gamble.
