We have been to Al Carbon many times and it has been very good. This was our first visit this year. We had a 7:30 pm reservation. We sat at the table until 8:05 pm. The waiter did not acknowledge us or even give us a glass of water. He cleared the empty table next to us and brought bills to other tables but completely ignored us. The restaurant as half full with many tables empty. We decided to leave. We will not be returning. Perhaps the restaurant has been sold. The prices are up 30% also. With poor service it does not seem worthwhile.

We enjoyed and was impressed with our dining experience, everything was delicious and ceviche is the word!- Ceviche Mixto: excellent, delicious combination of shrimp and octopus in a large bowl with corn and chips, festively presented and well suited for sharing- Lobster pasta, ie, fettuccine de langosta ,The highlight was definitely the grilled lobster, tasty with a hint of smoke, we finished everything, including the tasty bread- Antichuchos (skewers), chicken was perfectly prepared, the garden salad was a special treat many surprises such as the red ‘sweet drop’ peppers imported from Peru!The atmosphere is class yet comfortable.There are regular seating, high seating, as well as several sub-dividable private rooms for parties and special functions.Everyone we interacted with, including Erin our waitress, bar tending staff, kitchen/busing staff, were all friendly, courteous, and helpful.Restroom was clean, 5/5.
Parking: we found parking in front of the store and it was free, probably because we went a little late (about 7:30)

We celebrated my brother in laws 60th Birthday at Al Carbon, I selected the restaurant based on the reviews and menu, we were not disappointed!! The food was amazing, we all ordered different appetizers to share, all delicious! Our dinners were full of wonderful flavours, our waitress Taylor was amazing, super friendly and very knowledgeable about all the dishes we ordered! A complimentary delicious desert ~ Tres leches cake for the birthday boy, definitely order, you will not be disappointed!Thank you for making our evening unforgettable, we will definitely be back on our next visit!!

This was a surprise find, we stumbled across this gem of a restaurant without trying to find a Peruvian eatery.The wait staff was attentive and friendly. They knew their offerings well and provided excellent descriptions and recommendations.The dishes were authentic and full of thoughtful touches that made them stand out. The ceviche was simply outstanding, especially with the roasted maze and micro greena. The skewers were out of this world with an indescribable smoky flavour. The salad was refreshing with a healthy mixture of shredded watermelon radish and mango dressing.

Don't be fooled by the pictures. They have been zoomed in.. paid 42$ for 2 tiny overdone octopus tentacles over a mound of chick peas.. there was no value in the meal and I was very disappointed in it.. should have gone to a fast food joint. Do not recommend the octopus at all.Service was lovely and ambience ok.

Visited Al Carbon today after visiting another establishment which had serious shortcomings. We were a group of four. Two live here in Collingwood (friends) and my husband & I were here from Toronto. I decided we would than go to Al Carbon as it was on my list of restaurants to visit while in Collingwood. I am so glad I did!! The service was incredible….our waitress, Kayla was wonderful! From the moment we walked in we felt welcomed. We were seated at the entrance having a drink, and within minutes our table was ready! The best service myself and husband have had in a long time. The food was spectacular. I and our friend (the husband) had the octopus. Oh my word!!! Octopus is my favourite seafood and I was in heaven! Devine! My husband had the 1/2 chicken ….he loved it. My friend (the wife) had the chicken Skewers which she loved. The drinks were fantastic as well as the wine and coffees. This is a wonderful restaurant. A restaurant that should be visited by anyone visiting Collingwood and by people who live in Collingwood. You will Love It!!!! I am looking forward to my next visit already. Absolutely disappointing. I chose that restaurant because of the reviews. We waited for our order for almost half an hour. The chicken was very dry. Ceviche Mixto was poor. They used ready-packed frozen seafood. The empanadas were a very small portion. I think the chef wasn't there. Kitchen boys or shifters prepared poor meals. My daughter cooked better than that. The only positive thing was the waitress. They are very polite and helpful. That's why I gave them a good tip. Sorry guys for you.

Friendly staff, food are so amazing, each dishes are just like piece of art. It was my husband’s birthday and they prepared a beautiful dessert for him and very thoughtful. Definitely will come back again.

Came here back in Feb with my friend and her baby!Mac & Cheese ?Empenada de res ?Pulpo A La Parilla Y Tocino ?Pollo A La Brasa (half) ?If you're ever in Collingwood area and want a an amazing meal that's also affordable, you have to come here! One of my all time fav Mac & Cheese with crunchy top with shaved parm and Truffle, the best empenada I've ever had with soft and juicy Beef Brisket inside and perfect pastry wrap, Octopus and crispy pork belly were both flavourful and juicy, and the half chicken was extremely juicy as a huge portion including a side of fried and salad! The servers were amazing, friendly and even offered some local bakeries and hiking trails for us to try ? whenever I go back to the area I'll absolutely be going back for another meal ?

The drinks and desert were top notch but we the half chicken left much to be desired.We got in and and our waiter was very welcoming, friendly and funny. We started with drinks and the Gin apple was crazy good and I am not a fan of gin. We then got a cheese empanada to starts and I was very very flavour and had a good crunch to it. We were enjoying our drinks and app and ordered a half chicken to shared as it was heavily loaded with fries and that's what we were craving. The presentation was nice and the side sauces were really good but the chicken was dry and the fries very over seasoned. We needed the night with a desert, tres leches, and it hit at the right spots and got extra points for helping us cleanse our mouth from the early attack from the fries.Overall the I would come back again and definitely have more drinks and apps.
