We saw Tamales Mexico at the St. Catharine's farmer's market and couldn't resist trying out the food. We bought a tamale to split and a chocolate concha to try.The owner was very kind and was able to answer all of our questions. She had a nice set up and was able to offer food hot and ready to eat. We ate the tamale the moment we arrived home and were in love. It was so flavourful and delicious.The concha we tried was chocolate, but she also had vanilla and strawberry. We will for sure be trying the vanilla and strawberry ones next time we go to the market! It was so soft and easy to pull apart.

Everything that Carolina prepares is so fresh and delicious. The tres leches cake is moist and texturally perfect yet not overly sweet. All versions her Tamales are wonderful but in particular the mole sauce is the best I've had. In my limited experience with Mexican cuisine, mole is a very difficult sauce to get right but Carolina nails it; it's very well balanced.
