After five years of serving in-house Mexican cuisine, Vimex Corner Mexican Restaurant in Wallaceburg has strictly become a Take-Out-Only Service. House Favorite: Enchiladas Verdes Special, it the very best of ‘Mexican Cuisine’ served in all of Chatham-Kent consisting: three corn tortillas stuffed with your choice of ranchero chicken or seasoned ground beef, smothered with some melted cheese and a creamy tangy sauce featuring the light heat of Jalapeno Peppers & the unique appearance of green Tomatillos, served with refried beans, Spanish rice.
Enchiladas Verdes sauce features Tomatillos rather than Green Tomatoes. While both are members of the nightshade family, Tomatillos are not tomatoes, but the fruit of a different plant, and they are covered with dry papery husks, similar in appearance to husks on corn cobs. Green tomatoes are hard, unripe tomatoes, which are of a different consistency. Commercially, the ingredients on cans of Tomatillos can be miss-labeled as green tomatoes.
A very satisfying drink/dessert is the Magonada Beverage.

Vimex is awesome! The food is super consistent and delicious. The owners make you feel like family and are so kind and generous! We order here often when we want takeout but want something to taste homemade and comforting. We assume most of their products, especially their salsas are made in house - everything is great!

Delicious food. Chimichanga is very good and the restaurant theme is very nice. Ranchero chicken is a really good filling. Great Mexican Revolution posters. Would love to try the enchiladas some day.
Parking: Small parking lot but it is never full. Most people get takeout. There is street parking nearby as well.
The food here is excellent. The portions are very generous and the owners are always kind and polite. I highly recommend this restaurant.
