Online says they are open Tuesdays through Saturdays 4pm to 8... they are never open at 4pm. That's if they even open up at all. I showed up at 5pm Friday to see if they were open because we genuinely like their food, but nope not even open at 5pm. It's good food, but very unreliable service.

I was like most of canby saying not another Mexican restaurant but tonight I gave them a try and happy I did and if I leave a review it’s because they are bad. But not in this case I was pleasantly surprised how good it was. You actually see the flavors and took my taste buds back to Mexico so in my experience it’s pretty authentic. So yes canby give it a try #Stoner approved.

This is our favorite spot in Canby!! The food is delicious and the owners are amazing! The steak quesadillas are the best I’ve ever had. The tinga (seasoned shredded chicken) is to die for. Don’t forget to grab a side of guacamole 🥑!!

I hate to do this to a small business, but the experience here was just awful. First off, they’re not authentic. Also, one employee was eating while inside the truck, which is a violation of Oregon food code.

My husband got a burrito yesterday and it was soggy, had a ton of iceberg lettuce in it, and said he felt sick afterward. Said anything from Taco Bell would have been better (and obviously cheaper). Also, the cart is rarely open and taking away a prime spot that could be held by another food truck that knows how to do business safely and well.

Ok, I’ve been eating here for the last few months and it has always been awesome!!!

First let’s talk about the guacamole! It’s not the same guac you’re going to find everywhere, but it is my favorite ❤️.

I’ve had pretty much every burrito, taco, and quesadilla, but hey can make.

The shredded chicken (tinga) so moist and favorable. Same for the carnitas (pork)!!

The pollo asada (grilled chicken) and carna asada (steak) are very tasty 🤤

About a month ago I finally tried the quesadilla. It is hands down the best cheese I have ever had in a quesadilla!

All the meats are good in the quesadilla, but my personal favorites are the steak and carnitas.

I highly recommend you stop by for some delicious food. The staff has always been friendly and ready to help.

It doesn’t hurt that they are located at the Beer Library. Delicious Mexican food and beer.

Had the carne asada tacos with rice and beans. The food was not very good; poorly seasoned and low quality meat. It also gave me an upset stomach, so I question their food preparation. Much prefer other Mexican food trucks in the area and won't be back.

First off I want to say the girl in the front was very nice.

I ordered chilaquiles, asada tacos and the al pastor Rubia.

The chilaquilas extremely soggy and maybe warm chips. It was like it was microwaved to get the order out. No seasoning and lettuce was browning. One egg was runny and the other was cooked.
The asada tacos tasted like the meat had no seasoning what so ever. Had little to no cilantro and a whole onion on each taco. Meat was try and was extremely chewy. Once again not hot just warm.
For this last one the rubia... I took a piece of meat and tasted it and just threw it away. Very little seasoning. And again just tasted like it needed to be cooked longer.
I will say they do put a lot of meat on their tacos and they had good customer service. I had high hopes but unfortunately I will not be returning and will definitely not recommend at any point.

Amazing food! I ordered a veggie torta and man, it was on point! The guacamole was also fresh and delicious, and the salsa was good. The veggies in the torta were fresh and not old at all, I was so glad to see that, also my avocado in the torta was fresh and not gross. The black beans were delicious 🤤 I will definitely come back and try more dishes!

I can’t say enough good things about the Mexican food truck ; Adelina’s
at Canby Beer Library! Every dish I've tried has been a delightful experience. The chilaquiles are a standout—crispy, flavorful, and perfectly sauced. The churros are a must-try; they’re warm, sugary, and just the right amount of crispy on the outside.

I also love the refreshing pepino drink; it’s the perfect complement to the rich flavors of the food. The jamaica drink is wonderfully tangy and sweet, a fantastic way to cool down. And let’s not forget the carnitas quesadillas—they're packed with tender, savory meat and melted cheese, making for a satisfying meal.

If you’re in the area, do yourself a favor and stop by this food truck. You won’t be disappointed!
