I don't think these people ever had a New York Bagel! Don't be fooled by their photos on their websites , the size of their bagel is equal to the size of Mini bagels, sold in most Brooklyn bagel stores. Their baker doesn't proof the bagel long enough to rise to a proper size, thus the bagel is very dense and some are even undercooked.
