Signature cuisine, with a special focus on traditional Alentejo food. High level of manufacturing. A serious case. Very successful.

Alentejo signature cuisine that’s unmissable in Évora.
The chef manages to elevate traditional Alentejo dishes to unexpected and harmonious delicacies that resemble works of art.

A real treat for the eyes and taste buds!
This was by far one of the best restaurants we had in Portugal! The tastes are there, fair, well balanced and tasty. Bravo to the chef

Unfortunately, they didn't receive me. This is something that needs to be recorded: not welcoming customers is a reason for a low grade. The experience does not happen. The exchange does not happen. Total frustration, with 20 minutes left to finish.

I’ve visited a few really good restaurants around the region and hibrido is the most exciting. I was shook by the way the chef cook and was curious why is he not featured in the Michelin guide. The way that he execute the dishes was exceptional, brave and a good balance. If you’re looking to try portugese food, this is a place you HAVE to come. It’s not fine dining but it’s fine dining standard. I can see the restaurant making it big in the long run! Kudos to the chef.

Very particular restaurant, very small menu and no options for the "weirder"; However, the food is very well prepared and the staff is very attentive.
Kid-friendliness: Not very suitable for children due to menu choice

Everything here was truly delicious and memorable — all local, quality, in-season ingredients, used imaginatively and presented beautifully. Lovely service too.

Enlightening food experience! Great food! Max had the plate with the wild boar which was deliciously tender and tasty served with the food that it eats! He also had the alentejo pig, with delicate veggies and awesome sauce. I had a beautiful soup with the most delicious broth, the veggie plate, all seasonal veggies where cooked to perfection accompanied with a tangy sauce. It was a great service experience as the tales of our food where told. Oh and I had the most amazing kombucha in my life, hibiscus and rose petals, truly unique! Thank you, from Max and Alicia. Highly recommended, take two dishes.
Vegetarian options: I had full vegetarian plates, they where delicious.
