It's an experience. It took about 3 hrs for the four course chefs menu with 3 small appetizers and one pre dessert on top of the 4 courses. The view of the river while dining is excellent. It has the feeling of. Private club and the presentation is world class.
We have eaten in many fine restaurants over the years but Suba was a special treat. The service was simply amazing from the very first greeting at the door to the final goodbye. The dishes were unfailingly delightful and delicious, with a particular standout being the goat. The sommelier picked perfect pairings that complemented and enhanced each dish. On top of it all, the menu told a story that started with a Portuguese forest (complete with a smoke enhancement) and carried on through the goat sourced from a farmer the chef had known since he was young in his home town. Rarely does a restaurant do everything perfectly but this was the case at Suba.
Fabulous tasting menu combined with excellent service. The Portuguese wine tasting is also the way to go. Very generous pours. It was a lovely evening with my wife on our anniversary. Would highly recommend.
As soon as we arrived, they offered us a glass of champagne on the house and then they charged it without first informing how much it cost. I got sick in the restaurant because they left the vein in the lobster, I would never return to that place, I had to run out of there because of how bad I felt. It was not an exceptional meal as it should be in a Michelin guide restaurant where they did not take care of important details.
My wife and I were visiting Portugal for our Honeymoon and decided to make reservations at SUBA! I am so glad we did because it was our favorite restaurant experience during our whole trip. The location is great, the the views were amazing and the food was some of the best I have ever had!
The staff was very attentive and felt very laid back and not as high strung as other Michelin star places which I enjoyed. Felt like less pressure when eating, there was no rush and everything came out perfectly. The dishes presentations were hands down some of the best plating I have seen. Each dish was like an art piece and tasted delicious. I did the tasting menu and wife stuck to A La Carte.
The kitchen threw us some starter dishes and balanced our servings accordingly since I had way more dishes then my wife which was nice. The desserts were awesome and the cocktails were great! We did mention to the sommelier we were not wine drinkers when he came to our table. There was no issue with this whatsoever.
After dinner, our waiter Francisco told us about the rooftop. We got to chat with Joanna as well and informed us all about the building and the history. That rooftop bar was such a special treat after dessert. There was nobody on the rooftop considering every rooftop bar is mobbed at sunset. I was very surprised but we were told by the hotel staff in the lobby it's because they have a minimum to drink on the rooftop which probably discourages some guests but for us, we loved it, felt very intimate and special being our anniversary!

A beautiful boutique hotel. But unfortunately the experience was not good at all. Let's start with the fact that the chairs were stained, the table was unstable and swayed during the entire dinner, the napkins were on the verge of wear and tear and it was very hot and stuffy in the restaurant.
During the eight course meal we met a human hair in the black butter. Scales in the fish dish and finally bones (that shouldn't have been there) in the goat dish that damaged my son's tooth. All of this in one dinner.
In a real Michelin restaurant the chef would come out of his kitchen and apologize. But, apparently it was difficult for him to deal with the shame. I didn't need the lousy 10% discount they proudly presented me with when submitting the bill. Those who spend hundreds of euros do not need such miserable gestures, and the highlight is their lack of self-awareness when when we leave the restaurant they tell us "we hope to see you again".
about the food The meal was casual, not something to tell friends about. Most of the dishes were one complete mess of flavors that did not combine into something perfect. One huge disappointment. Especially for the time we spent there. Eight dishes in three hours, that's slow by any standard.
Having visited many dozens of rated restaurants all over the world, I wonder how this restaurant received their star.

We tried the “vouchers” tasting menu, which was very good… I lost count of the number of dishes in total, there must have been about 12… very good! Very extensive wine list.
Repeating the experience.
Spectacular view
Very friendly and available staff.
Please note: a deposit of €100 is charged in advance in case you miss your reservation.

As a long time lover and pursuer of fine dining and checking out local Michelin recommendations and stars, I was very excited to try Suba, however the main man staffing the table was incredibly subpar for even the most average dining experience. Suba is somewhere that has fine food concerning cultural ties and flavor, but it seems that their service is truly lacking.
Before we arrived, the restaurant called and inquired on any dietary restrictions- to which we specified a gluten free menu. They were eager to accommodate, with the waiter noting to us our need for one plate to be gluten free when we sat down. However to our displeasure, the waiter (Taigo) was a hit or miss with even remembering our request for a gluten free option that they relayed many times that they could accommodate and were working around this. On one occasion, the waiter brought out a dish and told me to “just dig it out” regarding mackerel in a tart shell. Next, he brought out a complementary dessert for our anniversary, which was a chocolate cake that he made no comment on being gluten free or not (I ate the surrounding decor for it, being berries). Fortunately we did have his attention, as he looked on through the kitchen window at us as I am sure he figured our dietary request was not so serious, since we shared the dessert (out of courtesy for the chef who prepared it for us, with me eating berries and my partner eating the cake). For how few tables were taken, he had rambled through the explanation for every course we were served, with not even a moment for a question. Additionally, it is good to also note the waitstaff and kitchen treated the pescatarians at the table beside us with the same forgetfulness and dismissal.
Overall an incredibly dismissive and under qualified waiter for a meal that was over $450 euros between two people. The food was fine, as was the rest of the staff. Suba is fortunate that Michelin recommendations are not awarded on the service provided by the staff.
Dietary restrictions: Fell well below expectations for gluten free dining. Skip this unless you are satisfied eating food from between a tart shell, as they will not simply bring you an appropriate plate.

March 7th 2024 dinner in Lisbon:
1-star Michelin restaurant, Suba, was great! The food pushed my boundaries a bit when it came to eating lightly seared Royal pigeon, but it turned out to be delicious with a potent raspberry sauce.
The dining room was quiet. It was raining intensely when we got there, so our view of the water was a little obscured, but I bet it would be nice on a rain-free day. The staff was very nice and polite.
At the end of the evening, we walked out to the rooftop, even though it was torrential downpour of rain. It was still a nice city view.
I like this restaurant because their dishes are creative, full of flavor, and a fair price for a Michelin restaurant. I would pick this place again.

Excellent food tainted by a manager with extremely bad attitude - we had an excellent welcome and pre dinner drinks. Once at the table we asked the waiter to explain why the Portuguese wine pairing is €150 whilst international wine pairing is €100 - he politely said he could not explain, but would ask the manager. After a few minutes the manager came over and I asked him to explain the difference and what’s in each pairing - his answer was rude and unprofessional “the international wine pairing has international wines like Riesling and Portuguese pairing has Portuguese wines” I asked if he could tell me a couple of the Portuguese wines (we have lived in Portugal ?? for four years and know many excellent wines) he replied “the wines are from all over Portugal ?? “ This was not what we expected and the restaurant could not justify charging so much for local wines - maybe they had amazing wines but we were not told!
The rest of the staff were excellent and very professional ?

I wanted a good place for a special occasion, called different restaurants and this one offered the best booking experience thanks to their friendly staff. I specifically asked if they would be able to explain in Spanish to spare me the trouble of being the translator during our meal, they said it wouldn't be a problem, but being in Portugal was an obstacle, our waiter Antonio did his best with some portunhol and that was appreciated.
We were suggested the tasting menu with wine pairing, didn't hesitate with the Vales one, and it delivered. I would be cautious if you're not familiar with Portuguese gastronomy, it might not make sense as a full piece, but it will definitely be delicious. We tried the international wine offer to be able to try some unfamiliar labels. They have their Michelin stars for a reason, so you'll be indulged. My personal favourite was the mullet fish, I wanted to lick the plate. Everything is cute, the tapioca chips on the cute tram, the traditional bread (pão com chouriço, broa and flatbread with furikake), cheese with squid ink, and garlic rosemary butter, and a lovely bread roll that combines flavours from across Portugal. Then the oyster amuse bouche, inspired by the river bed. The starter was barnacle, caviar and peach. Follow by a duck duo, magret with foie and berries, and a terrine with egg yolk and coriander. Next is the fish with sea algae and corn. Then lobster, clam ravioli and carrot. The main is aged fillet mignon with pumpkin and blackberry. Two desserts duos! The first one is orange, carrot, cheese and spices. The second one is apple with cinnamon. Finish with 6 sorts of Petit fours and great coffee. Lovely way to share a 4 hour journey across Portugal. Wish the bathroom was refreshed midway during service, and they had more than one for ladies. They were great catering for a food allergy, I didn't get the impression their uniforms were properly tailored, they deserve it! It is harsh to say, suggest you also care about having a fresh mouth breath. anyway, they did manage to make us feel special and I would go back and recommend.

Was a little apprehensive given the reputation and ratings of this restaurant, but service and staff were so welcoming, funny, and (gratefully) explained everything in English. Dining here was a bit like exploring the hills and fields and shores of the country. Chef Fabio’s roots are apparently his inspiration for so many of the dishes, all of them beautifully presented and delicious, even the little before & in-between dish surprises they kept serving us. Only regret is we did not expect to spend 2.5 hours there and had to rush a bit toward the end, but the experience is truly worth it and again, staff were so genuinely friendly and funny we really enjoyed them as much as the meal.
