This is the Sobrino de Botín, which has been operating uninterruptedly since 1725, although in the early years it wasn't exactly a restaurant, but an inn that received travelers, merchants, drovers. It belonged to the French cook Jean Botín and was not located at its current address, but at Plaza de Herradores, far away. Candido Remis, nephew of the first owner, baptized the house with the current name, Sobrino de Botín.[2]
