I was with a guest from France, an oenophile, and had asked for a tour of the cellar, I was told at the end of the meal but we were forgotten. I asked twice by message left on your answering machine. The duck confit dish was heavy, my husband couldn't finish his plate. The room was poorly lit, I couldn't see what I had on my plate. I had the headlights of the cars parked on the side of the hotel in my eyes. I asked to turn down the music, it was offensive: why not jazz or light classical? There you go, you wanted to know, I told you!

We went on a Thursday evening for a business dinner. My guest really enjoyed the 4 courses with pairings and my à la carte meal was excellent. Impeccable service. In the end, faultless and I highly recommend the Coureur des bois.

came into this restaurant with modest expectations, given that many hotel-affiliated spots often lean towards basic fare. However, this place was a revelation, far exceeding anything I’d anticipated. The atmosphere was warm and inviting, setting the tone for what would be an extraordinary dining experience.

To start, I ordered the Gravlax, while my friend chose the Sebaste. Each dish was bursting with flavors that were thoughtfully and expertly balanced. The beef was incredibly tender, practically melting in my mouth, and the mousse had a perfect harmony of mustard and mushroom, complemented beautifully by onions and crispy croutons for added texture. Every bite was a delight.

For the main course, I had the Magret, accompanied by caramelized bok choy, shiitake mushrooms, and a unique strawberry gastrique. The flavors were exceptional—I genuinely didn’t want the experience to end. It was that good.

We finished with a deconstructed chocolate cake and a tiramisu in cannoli form. I’ve never tasted a tiramisu that good! We were skeptical at first, but after the main dishes, we couldn’t wait to be surprised once again. Though we were full, we dove into the desserts eagerly. The chocolate cake was beautiful and thoughtfully crafted—the cake itself was moist, the chocolate mousse was perfectly balanced (not overly sweet), and the strawberries added a fresh sweetness to the dish. For an extra touch of sweetness and texture, there were small meringue pieces to finish. I’m a sucker for texture, so the crunch elements were a perfect addition.

The service was another highlight. Each dish was presented with detailed explanations, adding a thoughtful touch that made the meal feel truly special. It’s something I’ve only experienced at high-end restaurants like Hell’s Kitchen in Vegas.

This restaurant is a true gem in Mont-Saint-Hilaire. They have mastered the art of flavor profiles and deserve all the praise and recognition they can get. I’d gladly drive an hour to return. Thank you to the entire team for a memorable culinary experience!
