Beautiful ingredients, local produce, and a thoughtful natural wine selection. The effort in the kitchen is remarkable, and the service is truly exceptional.
That said, the portions are far too small. I understand and appreciate the pricing that comes with high-quality products—but they’re not operating in downtown New York. There’s definitely room to be more generous with the portions, and they should consider it.

Beautiful place, exceptional service, the quality of the food is very good, however I understand that salaries and food prices have increased considerably in recent years and that we should expect to pay a considerable bill when we go in this type of restaurant …….But at Baumier The ratio of price of dishes to quantity of food offered is completely ridiculous. I cite two examples: Chicken liver for $9 ($11.33 tax and service). It's two square pieces of bread measuring 3cm x 3cm with a little chicken liver mousse and two tastes of plum puree) in my opinion it's really laughing at the world, let's just say it's off to a bad start for the evening! Endive plate at $17 ($21.40 tax and service) It’s 6 raw endive leaves and 3 cooked endive leaves with a tablespoon of blue cheese sauce… completely ridiculous!
After having consumed our 5 dishes for two and our 2 glasses of wine each for a total of $200 (tax and service included) we were really not satisfied.

We've been here 3 times so far, and each time it somehow gets better. The food is Quebec on a plate. Everything is sourced as locally as possible, working with small producers and farms. The creativity of the food is remarkable, but the concept never sacrifices flavor.
I recommend putting your meal in the hands of the knowledgeable and wonderful staff. This last time, we sat at the bar and our experience was orchestrated by our server. She put together a series of small plates based on our likes, and everything was just perfect.
The flavors, the quality, the presentation - outstanding!
This is a must visit if you're anywhere in the area. Be advised, you NEED reservations. Enjoy!
