The reason for the low rating is their policy. We had breakfast here on the first day of our stay. The second day we wanted to have a more local experience found to a local cafe outside. My 11 year old insisted that she wants to have breakfast at the hotel since her was anyway free. I got her down they let her in and I was asked to join her as she is a child but I told them tht I will not be having breakfast. Then after sometime, the head server comes to our table and insists tht I will be charged for the child as I am not eating. He then said it would be half rate. I explained to him tht we were told by the reception tht it’s free for the child under 12 even if the adult is not eating. He arrogantly asked who said tht and I told him again that we were told by the reception. Then he turns to my daughter and asks her how old is she. He then turned to me and said today I will let her eat for free but don’t come back here tomorrow.
I want to explain to the management that if I can afford to travel here from Dubai and stay here at the hotel. I can very much afford to pay too. We are not homeless ppl tht he would say like that to us that don’t come back here tomorrow and tht she can eat here only today.
My daughter was so down after this incident tht she did not eat properly and she said she will take one croissant out but the same server happen to be around and he arrogantly told her tht she can’t take it out. Although we did see others taking out food.
Very dissatisfied with the service.

We ended up staying in and eating at CABU during our stay at the Hilton Quebec because of the rainy weather and to my surprise the food was AMAZING. Nothing negative to say at all. The quality + taste of the food, service, and ambience was much better than anticipated, and exceeded my expectations. Thank you, we will be back!

Our waiter Benoit was very accommodating and welcoming. We were pleasantly surprised by the quality of the food. The chicken pompadour deserves at least a 4.5. Chicken breast was tender and moist, and past was aldente. A touch of truffle oil or shaved truffle would give it a solid 5. PEI oysters were fresh and delicious. Caesar salad was good. Would have liked the fried Parmesan ? cheese to be crispy . The atmosphere could be greatly improved to match the quality of the food. No Pompadour pics. Dug in right away. The Portuguese wine was a nice addition.

Food was excellent. Ben was our waiter and did a fantastic job looking after the 8 in our party and sang happy birthday to our 7 year old grandson in French to make it a special occasion.

For a regular buffet is is great but for a high end hotel, ie Hilton, one should expect better selection. The coffee is only drip, no expresso. Orange juice and fruit juice are all commercial. The knife to cut the bread is past its useful life, it doesn't cut anymore. I know it's a detail but it's almost unrespectful for costumer to have to use a bread cutting knife that you might find at value village... the server was the highlight of the experience here. All in all it's OK, bacon was ultra thin, and cold, French toast do not represent what a real French toast is in Quebec. Was there maple syrup? I didn't see any

Not my favourite. I personally find it's a bit expensive for what it was. The pasta had no taste. The crème brûle was very unique, it tasted a bit like lemon and it was different from a normal crème brûle. The waiter was very nice but in the end we had to wait a bit for him to return to take our dessert order and even to pay the bill. Conviently located in the Hilton hotel if you are staying there, nice you don't have to leave the hotel if you don't want to.

Had dinner there with friends (table of 5), so we were able to sample a lot of items. The food was excellent. Great presentation. The staff did a very good job and was very friendly. The cocktails list is also very good.

Great atmosphere - server was wonderful however the food lacked taste and when we spoke to the manager regarding the tartar we ordered that we couldn’t even eat, he was EXTREMELY rude and dismissive
We are here for the weekend and will not be returning to dine unfortunately

Cornish chicken well cooked, but the presentation of the plate leaves something to be desired, too much salad and vinaigrette in exaggerated proportion
