Bleu Marine is hands down one of the best dining experiences I’ve ever had. I had the chance to try their “Great Menu” on December 22nd, and wow, it completely blew me away. Everything—from the food to the wine pairings—was just spot on. If you love good food and wine, this place is an absolute must-visit.

The “Great Menu” was a five-course masterpiece. We started with the Duo of Tarts, one with salmon and the other a cauliflower tart topped with caviar. Both were just so delicate and flavorful, and honestly, the caviar added this perfect touch of luxury.

Then came the Redfish, Sea Scallop, Urchin, and Artichoke—this dish was like the ocean on a plate. The textures and flavors were so balanced, and when paired with the Rioja, Los Corrillos 2021, it just all came together. That wine? Incredible. The minerality really brought out the sweetness of the seafood.

Next up was Rillettes with Beetroots and Truffle, and oh my gosh, this dish was unreal. The earthy beets with the truffle was just perfection, and they paired it with Minéral+ 2022 from Montlouis, which had this crisp, vibrant profile that complemented the dish beautifully.

The Lamb Chop was probably my favorite. It came with chimichurri, tomato, and a hint of lavender. The lamb was cooked perfectly—like melt-in-your-mouth tender. The chimichurri added just the right amount of brightness, and the lavender was subtle but added such a unique touch. And don’t even get me started on the wine: the Rosso di Montalcino 2021 was bold and earthy, just what this dish needed.

For the grand finale, there was Vacherin Mont d’Or Fondue, followed by the most indulgent dessert: Fig, Chai, Praline, and Foie Gras. I mean, fig and foie gras in a dessert? Who thinks of that? It was so rich and delicious, and the Madeira, Sercial 10 years, was the cherry on top.

Oh, and the wine pairings—just wow. They didn’t just complement the dishes, they actually elevated them. You can tell how much thought went into each pairing, which made the whole experience feel super special.

Honestly, if you’re on the fence about trying Bleu Marine, just go. Go and order the “Great Menu.” Sometimes life gives you these moments where you need to treat yourself, and this is definitely one of those moments. And if "Great" is an option, you take it. It’s a meal you’ll be thinking about for a long time after.

Food :
The experience was deplorable. The menu had 7 dishes, but apart from the first course (red fish) and the scallops, the other 6 dishes were inedible and had no connection with traditional French cuisine. Every dish tasted very poor, which completely shattered my expectations based on my previous experiences with French gastronomy. In addition, the foie gras mentioned on the menu that we ordered was never served. It remains unclear whether this was an error or another reason.
Service :
The service was equally disappointing. The staff was extremely distant, just mechanically presenting the dishes and serving the wine, without offering any real service. Worse still, when paying, the waiter made remarks that subtly humiliated the customers, leaving a very unpleasant impression.
Price :
The prices were shockingly high. Before our visit, we had checked Google reviews and found a clear and transparent menu with reasonable prices, which led us to choose this restaurant. However, once there we were informed that due to Christmas the a la carte service was unavailable and all customers had to opt for the same 7 course menu. At no time were we informed of the price. Given the poor quality of the dishes, we were shocked to discover a bill of 500 CAD. This far exceeded our expectations. We suspect the restaurant of non-transparent and potentially misleading pricing, as the menu did not mention any prices and we were not informed in advance of such a significant price increase compared to the standard offering.

Food:

The pricing was outrageously high. Before our visit, we checked Google reviews and found a clear and transparent menu with reasonable prices, which encouraged us to choose this restaurant. However, upon arrival, we were informed that, due to Christmas, à la carte ordering was unavailable, and all diners were required to have the same 7-course meal. At no point were we informed of the price. Considering the mediocre quality of the food, we were shocked to find the bill totaled CAD 500. This far exceeded our expectations. We suspect the restaurant of engaging in non-transparent pricing and potentially deceptive practices, as the menu did not display prices, nor were we informed in advance of such a significant price increase compared to standard offerings.

We tried this restaurant and opted for the 5-course tasting menu, the "Grand Menu". A real disaster from start to finish.

The dishes were poorly executed. One course offered Wagyu beef: a single thin, warm slice on the plate, accompanied by strips of raw apple (?). Another service offered couscous carbonara, but the sauce was very watery (the opposite of a carbonara) and lacked flavor. The couscous was way overcooked. Dessert, meanwhile, included a type of miso ice cream that was way too salty.

Overall, no consistency between the dishes, without any guidelines. In addition, all the services were in brown or beige tones: no color, no lightness. The dishes were heavy and unappealing. Very “bland”

The waiter, who was also the owner, seemed uncomfortable explaining the dishes and called the wine "grape juice".

And the worst? An addition of $230 per person, taxes and service included, without alcohol.

Service: The evening begins at Neptune with rather ordinary and unfriendly service from the waiter, bordering on arrogance. We felt rushed to finish our drink because the table was ready and the staff were being pushy. Once seated at the restaurant no offer for consumption before the arrival of the dishes. Staff insisting on taking the large menu in order to “make things easier in the kitchen”.

Ambiance: No atmosphere, absent decor with very old furniture (table, chair, bench) and also low-end cutlery. Toilets to be completely redone!
Cuisine: Only good point of the evening! The dishes are good and correct but nothing to envy of other offerings in Quebec City for this price range.
I won't go back!!

I was recommended this restaurant, good vibe, very cool semi-basement thing. Very good and personal service. The food was ok but uneven. Among other things, I didn't understand the oyster puff pastry, no puff pastry, béchamel sauce with 3 pieces of oysters with a little cheese on top. For $27, it didn't work, and it wasn't seasoned either. And why call a puff pastry without a puff pastry. I imagine it was a mistake that the cook AND the waiter escaped, which is unacceptable in itself. Good cocktail though.

Oct. 26, 2024 - Highly recommend this restaurant! We enjoyed the 6 course meal + with wine pairing, and each dish and wine was briefly described, adding to our appreciation of the experience. The staff was friendly and attentive without being intrusive, making the evening even more enjoyable. Would definitely return!

After a visit with family we happened across Bleu Marine on our way back from our hotel. We didn’t have reservations, were dressed VERY casually, and had two tweens with us. We then proceeded to have an incredible experience.

The execution of each course was perfect. The wine pairings were excellent and fun. The staff was attentive and informative.

Order the 3 or 5 course “experience” with wine pairings and let them show you what a passion for food and hospitality looks like.

Went to Bleu Marine last night. The food was just okay - nothing special, small portions nothing awful. Service? Same deal. The waiters did their job, but don't expect to feel pampered.

For what they're charging, especially their wines I expected way more. There are definitely better spots in town where your money will go further.

Bottom line: It's not terrible, but it's not great either but it’s sure freakin expensive for what is. I would recommend saving your cash for somewhere that'll actually impress you.

We were on a one week culinary adventure to Montreal and Quebec City. Not a single meal was disappointing but the star of the week was Bleu Marine. Each dish of the six course meal was innovative and was presented flawlessly. The wine pairing was perfect and featured wines we had not had before. The service and knowledge of the staff was exceptional.
