We recently dined here and were initially impressed by the elegant ambience and well-presented dishes that reflected its Michelin-star reputation. However, we were very disappointed to find a hair strand in one of our mocktails. This was unexpected and concerning, as we had high expectations for food safety and hygiene at such a prestigious venue. The staff were courteous, but this incident affected our overall experience. We hope it was an isolated oversight and that stricter quality checks will be maintained moving forward.

I dined here on Wednesday, February 26th, and the experience transcended what one typically expects even from an exceptional restaurant. Each course demonstrated precision, creativity, and balance, engaging all the senses. Combining a refined atmosphere and impeccable service, the evening felt less like dinner and more like a carefully orchestrated culinary journey.

Best food experience ever!! Beautiful atmosphere, great service. We had the Chef's counter experience and it was amazing. The only tiny downside was that all the parties AT the Chef's counter did not start their experience at the same time, so staggered attendance led to multiple staff explaining different dishes to different parties at the same time, which made it more difficult to hear - especially when the staff are speaking different languages.
Otherwise amazing and I'd recommend any one who can do this to PLEASE take part because you will not regret it. From the moment we got the text to enter a secret code to get in - we were completely taken aback by how wonderful it all was.

As far as I'm concerned my experience with Tanière³ began prior to entering the front door. The energy was undeniable as I made my way down the stairs and the view once I entered into the actual dining experience was breathtaking. I don't think there is anywhere in Canada that provides such an alluring stage for fine dining enveloped with such breathtaking history.
Architecture that has stood the test of time - perfectly complimented with modern additions. Tanière³ has mastered enhancing the historical venue while bringing it to modern day.
Each room that I sat in throughout my dining experience was pure harmony.
My husband and I embarked on an experience to dine at the Chef's Counter with another couple, we were greeted at the entrance with warm, personable professionalism, which never faltered. Everyone worked seamlessly together, the transitions were impeccable. Whether it was the movement of a chair, a cup, providing directions to the restroom - for myself and other attendees it was evident everywhere I looked an observed. Flawless professional, KIND consistency. The descriptions of each dish were enchanting - the passion radiated from each different individual presenting the dish they prepared (which I loved that we saw the creators of the dish!)
We had the opportunity to view the kitchen and shared some brief conversation which demonstrated yet again the kind consistent professionalism.
As we sat at our table overlooking the kitchen and viewing the different dishes being prepared it was amazing. My husband and his brother opted to do a pairing that involved some incredibly unique choices that perhaps could be considered once in a lifetime. Myself, and my sister-in-law opted for mocktails. Simon the mixologist for Tanière³ is undeniably gifted at his craft, and it was sincerely enjoyable to watch his presentation of each bottle and drink (I don't even speak French and for the parts spoken in French to our other group attendees I was equally captivated) The explanations I received for my pairing filled me with eager anticipation to tasted his divine creations. Perfection - every time. Pairing and creating for 18 courses flawlessly - let that set in.
The genius of Chef François-Emmanuel Nicol, was just astounding, although I was provided descriptions in English for each dish, the explanation in French felt like they were crystal clear because of how much you could feel as he spoke. There was no detail overlooked, each dish was so invigorating for our palate and our group of 4 could not get enough! We continuously asked how is it possible simply match each dish we tasted prior... yet every dish that came was equally unique and incredible . The flavors were in perfect harmony even when they juxtaposed each other - incredible. Genius. There was no denying the breathtaking details of each dish. The ingredients were woven into art and it was such a delight to partake in it.
I've been fortunate to experience an assortment of high calibre restaurants, however my experience at Tanière³ was incomparable. It was such an honor to experience the talents of Chef François-Emmanuel Nicol, Simon Faucher and the entire team that made this experience one I will cherish for a lifetime

An experience. Everyone I spoke to said Tanière was about more than just the food. And they were right. It was the most complete dining experience I’ve had in North America. Exceptional cooking, thoughtful presentation, creative/local ingredients, warm hospitality, and a coherent story that ties everything together.
The evening began enigmatically. I entered a door code, descended into what felt like an underground vault, and arrived at a speakeasy-style lounge. After a few small bites there, I was escorted into the main dining room (the chef’s counter). With the low light, heavy wood, and intimate setup, sitting at the counter felt like gathering for a secret meeting in a medieval chamber. One of the perks of the chef’s counter was the clear view into the kitchen, and more importantly, being served directly by chef-owner Nicol for several of the main courses.
Food-wise, there wasn’t a single miss. Despite nearly 20 small bites and dishes, nothing felt repetitive in concept or flavor. I visited at a perfect time for Canadian seafood, with prime ingredients from the coasts and the St. Lawrence River like bluefin tuna and scallops.
The dry-aged bluefin tuna may have been the best seafood dish I’ve ever had. Each bite was packed with deeply concentrated umami, enhanced by bright, fruity notes of plum and blackberry. What elevated it further was the non-alcoholic pairing, which echoed one of the dish’s core flavor notes and reinforced the overall composition rather than competing with it. This approach applied through the rest of the menu. The pairings consistently mirrored a central element of each dish, which added depth without sacrificing creativity or flavor.
Dessert was also impeccable. The corn madeleine, corn cannoli, and popcorn reimagined one of Quebec’s most pedestrian crops into something playful yet refined.
Among the dozens of Michelin-starred meals I had last year, this was undoubtedly in my top three. Would definitely be back to try their other seasonal tasting menu.

Wow! What an experience. It’s a carefully orchestrated evening of story telling about the history of the area along with local ingredients all done beautifully with amazing food, drinks, and exceptional service. Yes it’s expensive, and yes every bite is better than the one before it. It’s an experience not just a dinner. So you’re paying for dinner and a show. Would definitely return!

Best dining experience of our lives. Is it five times more expensive than most restaurants? Yes. Is it worth it? Also yes. If you have the chance to secure a reservation, you will be glad you did.
We will absolutely do this again at the next opportunity. I won’t say more, because part of what makes the evening special is discovering the moments as they unfold. It is a whimsical, immersive experience from start to finish.
My wife and I have dined at Michelin-starred restaurants in Tokyo, Budapest, Rome, and elsewhere. This surpassed them all. Officially two Michelin stars, but very clearly a three star restaurant in the making. Bravo.

This restaurant is truly unique. The staff are exceptionally professional and friendly, and the dining experience is unlike anything else in Quebec City. The dishes are prepared not only with high-quality ingredients but also with genuine care and attention. You can really taste the love that goes into every plate.
