One of the best restaurants in Rimouski opened in this cold month of February, serving French-inspired cuisine. Both comforting and sophisticated, the 7-course dishes during our visit contained scallops, carrots, anchovies, gnocchi, duck, haskap and apricots, highlighted by the velvety creamy aspect of the sauces, emulsions and reduced broths, all well balanced. Great experience! The flavors were amazing. The service was perfect and the atmosphere became less noisy after 9 p.m. was perfect for us. If I had just one downside, go easy on the salt because the finesse of the gravlax-style halibut was overshadowed by its sauce. Otherwise everything was perfectly seasoned.
