Definitely our family favorite bakery! Everytime we get haircuts at Anchor barber we get the raw cookie dough bowls and cookies on the way home! We love this place, lots of choices. Loved the Netflix cookies too 😂👌

Great food. My girlfriend is always wanting to try new and local bakeries for various sweet treats. After trying Gingersnaps yesterday ( 1/24 ) she found her place to go to all the time. She can't stop giving the stuffed cookie compliments.

I stopped in here on a first time visit. I live close by and found it on an internet search and decided to try it out. I went there Saturday afternoon before the big snow storm in January. Upon my arrival I realized I had a flat tire. After calling AAA I decided to go into the bakery. I met one of the owners as he came out to greet me. I explained my situation and told him AAA informed me it could be a 2 hour wait. He was very welcoming and invited me to stay and wait inside the bakery shop so I would be warm. His wife was there too and she was also very nice and welcoming. Both of them came out to check on me periodically. AAA finally came and I was on my way. But,….. I did get some delicious sweets before I left. The cookies are amazing and I also got a fudge brownie and stuffed cookie. All of them are very delicious. Stop by Gingersnaps Bakery you just might see me there because I am definitely going back there!

Gingersnaps bakery did our wedding cake and exceeded our expectations! Not only was it perfectly decorated it also tasted incredible! They were able to customize the flavors so we were able to have a coconut frosting and a key lime filing in January. It was absolutely perfect. I would recommend them for all your cake and pastry needs for any occasion.

Everything in here is absolutely scrumptious! The cinnamon rolls often sell out early, but you gotta snag one because they are stellar. They are always very friendly and personable. It's a cute little spot, but there isn't too much seating, so plan to take your goodies to go. They accept pre-orders too, so if you have an upcoming event, you can plan ahead!
We worked with Kayla to do our wedding cake and desserts and she did a phenomenal job! The cake sampler she provided made it really easy to pick flavors and styles of cake (we went with mocha, which was a hit) and she was super responsive answering all our questions and helping us work out exactly what we wanted.
We also had a dessert table with boxes for guests to take home as favors, and it was such a success the whole thing was cleared before the night was over. Gingersnaps provided an awesome variety of desserts and every one of them was a crowd pleaser. We’re extremely satisfied and keep looking for excuses to go back and try out more of their offerings! Easy recommendation.

I have never been disappointed by anything I have gotten at Gingersnaps so when it came time to order a wedding cake this was the clear choice. The whole process was great from start to finish. We were provided with several samples of our choosing and were able to take our taste test to-go so we could take our time in considering our options. Kayla was fantastic to work with. During our in-person consultation she took her time with explaining our different options and was beyond patient with our questions. I left our consultation calm and confident, knowing that the Gingersnaps team would take care of everything.
Fast forward to our big day, the cake was delivered ahead of schedule which was a huge relief. In fact, they were in and out before I even arrived. We opted for a snickerdoodle cake with caramel buttercream and it was absolutely delicious. Additionally, I had several guests throughout the evening ask if I was sure the cake was real because it was that beautiful. The attention to detail and love that was put in to this cake was evident by the final product. I am beyond satisfied with the whole experience.

It kills me to write a review this low because I’m a new resident of Lincoln and who doesn’t want a fantastic bakery in town?
Even though I don’t feel the baked items are my favorite I was happy with the establishment itself- the inside was nicely decorated, staff were cheerful, the place smelled wonderful, and $8 for a muffin and brownie I felt were very reasonable.
My issue is that I ordered my birthday cake from here (raspberry almond). I felt the cake was dry with not enough raspberry filling and what we did have was very tart. Not a huge issue, I thought I had left the cake in the fridge too long. So, we stop in today for a salted caramel brownie and a lemon strudel muffin. I will say I loved the caramel on top- perfect consistency and flavor. However, the brownie was drier and cakey when I prefer fudgy. The muffin I also felt was dry and lacked lemon flavor, it felt more vanilla than lemon.
I would never say this is a bad establishment- I put a lot of stock in costumer service and they are wonderful. I may just be ordering the wrong treats or come on days that they’re over baked.

We bought a variety of cookies and brownies for a cookout and they were an absolute hit! I highly recommend their caramel chocolate cookies! They are divine!
