All fresh homemade ingredients. Wood fired. Just absolutely the best

East coast folks struggling to find an average analog for a budget cheese pizza back home. Caio Baby’s basic Neapolitan will just barely meet that need. The dough isn’t as chewy. Not as much cheese. But it’s close. No hard, dry crust. Good amount of moisture. Thin, but floppy crust. It’s solid Neapolitan.

The wood fire oven is the star here. So many pizza spots in Memphis under heat and overcook their pizzas. Over-baked bread with stuff on it. If you want a typical Memphis style pizza, do not visit Caio baby.

If you’re like me, you’ve spent years trying out “New York style” pizza spots in the Memphis area. Most of them have failed me. Caio baby surprised me. I’ll go back for a more complex but still simple pie in the future.

One thing to note is price. They use imported ingredients. The price reflects that. I’d love to see a basic east cost style pie from this place with run of the mill ingredients. I bet they’d knock it out of the park.

Unfortunately I've had several experiences at Ciao Baby, some good, some bad. Their Alfredo is usually really good, creamy! I've tried their buffalo wings, garlic knots, and buffalo chicken pizza. However, the garlic knots are super greasy and taste like burnt grease. I went in to get Alfredo today, and got a plate of poorly prepared noodles. They have no Alfredo sauce compared to what you get when you dine in.

I’d heard great things, but I was overall disappointed. Their menu is extremely extensive. The girl taking our order was very off putting and seemed annoyed at the amount of time it took to look over their menu (we were the only people in line). The soda machine is up really high and made it difficult for my kids (ages 11 and 10…old enough to get their own drinks) to do so without spilling. The crust was flimsy. Not crisp whatsoever and flopped over, making all the ingredients slide off. The ingredients tasted ok…but I couldn’t tell a difference for the price of an average pizza place. I’ll stick with Lost Pizza next time.

Real wood fired pizza from an imported oven. All the pizzas are the same size but the variations are considerable. Semi table service, order in a line then it gets delivered. Self serve drinks. I selected the 4 meat pizza and was pleasantly surprised. Thin flakey crust that’s not too crispy. Enjoy.

Great spot for a quick bite! Loved the laid-back feel. Clean restaurant and really delicious pizza. Service was excellent -- the young lady who took our order was very helpful with their extensive menu. We split a BBQ pizza and the gorgonzola was a nice twist on the dish! Beer and wine options as well as sparkling water. Thank you for a great experience!
