Coyote blues is one of the best Mexican restaurants I've ever had they're fast I didn't even get time to eat my chips and salsa and they was coming out with my plate of food

The food was good, but they love the jalapeños. Even when I told the waitress I wanted NOTHING hot (spicy) I got a ranch dip and egg rolls that were hot. She didn't know. Other than that, the food was good. They have mainly a Mexican menu with other foods such as chicken and crawfish. Couldn't tell if they were trying to be tex Mexican or Cajun.

When I first saw that this was supposed to be a Cajun/Mexican fusion restaurant, I was excited. Perhaps I let my excitement get away from me. I was expecting something unique and punchy and vibrant. Well, that's not what this place is.
I'm my mind, I expected fusion ideas to be on the menu. I had dreams of some kind of jambalaya stuffed in a burrito and topped with some kind of gravy. Or maybe there would be a gumbo with chorizo sausage and chicharons...
