I appreciate your detailed response. I leave an honest review almost every place I go. Most of my reviews are 5 stars! As a business owner, you are not required to have Google reviews and can’t realistically expect all 5 star reviews. Negative reviews are not meant to hurt businesses, but to provide constructive feedback and valuable insights into customer experiences and can help businesses grow by highlighting areas for improvement. The fly situation was a major part of my experience at your restaurant. Why would I not include that in my review? Yes, we were by a door- but if propping that door open leads to a major fly problem inside, then my hope is that by including that in my review, it will prompt you to close the door, eliminating the fly problem, and making a more enjoyable experience for future guests & possibly not having future negative reviews about flies. I understand that there are some reviewers that are vindictive, but the vast majority don’t have a personal vendetta against you- they’re simply giving honest feedback. I read back over your responses to some honest reviews, and my position remains the same. Especially with a young business in an area that many new businesses historically don’t last long- it would be wise to respond with care and kindness, even if you feel that their complaint is invalid, malicious, or they’re trying to put you out of business for whatever reason. People will see your heart through your responses, even if they’ve never met you in person. Lastly, the restaurant wasn’t busy at all during our long wait for the bathroom.
Initial review:
We’ve lived in Spring Hill for 5 years and have never heard of this place. I did a quick Google search for brunch places in Spring Hill and we decided to give it a try.
Let’s start with the positives: Super cute environment! I loved the vibe and the decor. The food was great, for the most part. Everything was flavorful & fresh. I had a bite of my son’s French toast and it was probably the best French toast I’ve ever had!
Negatives: We ordered at the kiosk. Since we’ve never been here before, we weren’t familiar with the menu. It took a while to order and I felt rushed since there were people behind me. It also asked for a tip before service was provided. I am NEVER a fan of this since I tip based on the quality of the service provided. Since you order yourself, seat yourself, get your own napkins, etc. I’m not really sure what I’m tipping for. I would hope a business that is run like this would pay a livable wage so tips aren’t necessary. Maybe they do, I don’t know? I did tip 20%, even though I was very hesitant. If my husband would have been with us, they would not have gotten a tip at all. Anyway, we got a cute table and sat down. Our drinks came out promptly, followed by our food. Like I mentioned, the food was great! The only problem with the food is that my brunch burger was absolutely enormous. There was no possible way to bite into it… at all. There also weren’t knives? It was literally the messiest food experience ever. While it tasted good, it wasn’t practical, especially without proper silverware. While we were eating, the fly situation was OUT OF CONTROL! They were all over our table, flying around us, and on my silverware and plate. I’m not sure why the door was propped open. Unfortunately, even if we said something, there would have been no way to rectify this situation during our meal. Lastly, there is one single bathroom for the entire restaurant (that we could find, anyway). My daughter and I both waited for the bathroom for an unreasonable amount of time.
I would normally be willing to try this restaurant out again, but I am overwhelmingly disheartened reading some of the abrasive responses by the owner to people giving less than perfect reviews. I’m not sure why the owner doesn’t realize that hostile and sarcastic responses will only escalate the issue, leading to negative publicity and

Amazing apple pie French toast!! Delicious, lip smacking mocha. Live band with appropriate upbeat tunes, a colorful cast of servers and staff, with quite the pleasant and gracious owner who offered my fur baby, Cartel grilled chicken. Insanely positive experiences. Literally one of the few places I've locked in to my GPS as it is a must to eat here again

I wanted so badly to love it. We ordered a delicious looking, fresh orange/cranberry muffin from the case to share while we waited for our brunch and it arrived at our table absolutely burnt, my husband had to go exchange it for a new one. When our skillets got to the table, the sausage patty and the bacon were absolutely black and dry, again, my husband went back to the counter to request a new one. He was told they'd remake it and bring it to the table so he came back and sat at the table. When the server approached our table, he tossed the plank with the new sausage on the table of the people next to us, and promptly turned his back and left. The other patrons were obviously startled with his rudeness and were confused as to why it had just happened. We had to apologize to them and let them know that it was meant for us. The bacon is far too sweet, coated with a maple glaze. I was also excited for their cloud foam for coffee, but it was also sickening sweet, ruining the flavor of the coffee itself. I really, really liked the concept of this restaurant and the community appeal, but the food was sub par and the service was even worse.

OMG!! If you haven't been to the Brunch Collective, you need to go! The Mini Toast Flight is great if you can't make up your mind with all the wonderful choices. The Bruleed Banana and Nutella French Toast is AMAZING! The flavor of the brioche bread dipped in egg batter with the bananas and Nutella tied all together is delightful. Don't forget your Hazelnut Latte:)

It’s hard to find a place like this nowadays. With corporate chains and low quality food all over the place, this is the place you should go for coffee, food, etc. In terms of the food and coffee, it’s delicious. You can taste the quality of the food. The owners emphasize the importance of the ingredients they put in the food and how they put no seed oils in their food at all which is something I value a lot. The place itself is beautiful. Everything is designed so nicely and you can tell how much attention to detail was put into designing the place. Definitely recommend going to this place, I love it

A phenomenal spot. A one-off, well done, charming, eclectic spot.
I had the breakfast burrito with a couple sides of jalapeño ranch. Was a fat burrito well worth the price.
The owner was a dope dude and took care of us the entire process.

I've had this place on my list of places to try in town. WOW I wish I would have tried it sooner! Everything about this place is lovely. The atmosphere, the food, the service, the amazing coffee. I was blown away. I wish every restaurant in town was as great as this place. You could tell that everything was made fresh and with care. The coffee was MASSIVE and tasted amazing. The spicy hash bowl was *actually* spicy. And the French toast? Well, you'll have to see for yourself how fantastic it is. A plus is that my young kids also loved everything and they have a nice space outside they ran around at for a while. I can't recommend this place enough!!
