We ended up at Miller’s Smokehouse after a friend working at Acre Wood Dental - Temple insisted it was “required eating,” and honestly, they weren’t wrong. This is the kind of place where you walk in with a group and immediately feel like you’re about to make a great memory. The smell of slow-smoked brisket hits first, then the sight of trays loaded with sausages, ribs, and sides that look like they came straight out of someone’s proud Texas kitchen. Our group shared just about everything—tender brisket that barely needs a fork, sausage with the perfect snap, and mac ’n’ cheese that disappeared suspiciously fast. Portions are generous, prices are fair, and the energy is exactly what you want when you’re catching up with friends: lively but not chaotic.

This is my first meal at Millers Smokehouse. I decided to order 1/4 a pound of the brisket, sausage, and pulled pork along with a side of green beans. The brisket was my favorite. The pork was good as well. I didn’t care for the sausage. It just didn’t have much flavor. The green beans were well seasoned with a peppery kick I liked. Overall, a good meal and experience. I’ll be back my next time through Belton at lunchtime!

I thought the food was fairly decent. My criticism is excessive fat with the brisket for the amount that I paid for also their pork ribs very tasty tender, but it had more like a sugar cured or honey cured bacon taste. People were really friendly.They didn't have beer on tap when I got there because of refrigeration issues which I appreciated their honesty

The food was good and the seats full. The workers were busy and not slacking off. There was a moving line to get in. The portions were on the small side but enough. Which is good because there are no waiters, per sé and I didn't want to get back in line.

Pair it with a cup of their coffee, and you’ve got a breakfast worth driving out of your way for. Between the quality, the friendly service, and the cozy atmosphere, Millers Smokehouse nails it every single time. Breakfast here isn’t just good — it’s unforgettable.

I’ve been to Miller’s several times and the BBQ is always solid, but today’s experience left me rethinking the drive from Georgetown. We arrived right at 11am and went in through the clearly marked “to-go” door, but were met with an attitude that made it feel like we’d done something wrong. The person taking our order also seemed less than welcoming, almost as if placing a to-go order was an inconvenience. First impressions matter, and the staff you put out front represent the whole brand. The food is good, but the customer service piece could use some retraining.
