Stopped by Chuck's Country Smokehouse for the first time yesterday afternoon. The food is amazing! Brisket is some of the best I have had. My wife and I do the Texas BBQ crawl all over the state and have been to the majority of the Texas Top 50 list. This food is in the top 5 we have experienced and it is 23 miles from our house. Sausage, boudin, and brisket was what we ordered we will definitely be back to try EVERYTHING else. Great atmosphere and super friendly service. Best in East Texas in my opinion! Never seen a barbecue place that is open so little. Very part time , must not like working. Food is decent for Carthage Tx. Crazy wait time for small order.

Finally timed it right driving through whem they were open. Worth it. Everything good. Mac & cheese was fantastic, and so is the BBQ sauce, and so is the sweet tea. Staff super friendly.

We had the brisket, ribs, potato salad (no fries) and beans. I witnessed all the meat being warmed in a microwave. That was a red flag because they have a sign at the entrance that states basically don't ask how long because the tastiness of their BBQ shouldn't be rushed. None the less it wasn't very good. I imagine people think this place is good because there's no competition. Drive to Marshal and get Bodacious if you want good BBQ!! Their Rib plates will be worth the drive.

Best brisket in East Texas, hands down. Absolutely contends with the big boys in the hill country. Chuck is a fantastic dude and the staff is awesome. Get there early.
By far the best BBQ around!! Great atmosphere & friendly staff! The owner, Chuck, is pretty great too! Beef ribs are fall off the bone good & the sandwiches are phenomenal!!

Always great! Never had anything from here that wasn't delicious. Got brisket tonight he told me I would really like it because he tried something different. He wasn't lying! It was so good! In my opinion the best bbq in the area no doubt! Love this place!

I drove out of my way to have lunch here. Took me 20 minutes to get there and it was closed. Update your hours, or let people know you're not going to be open. I have no idea what the food is like.
