I sampled barbecue from this place during the Trobodour Festival a few years back, but had NO idea they were in a parking lot in Decatur until last week, so the wife and I made a drive, eventually found their spot, and got in a relatively short line for a Saturday(5 people).
Went with basics.... Brisket(they only had chopped today... Which was very disappointing, so I won't even discuss that), ribs, their boudin, and 2 Texas Twinkies.
The ribs were amazing. Perfectly smoked, flavorful, with an excellent glaze. The boudin was easy above what I thought it would be... Spicy and meaty. But the standout was the Twinkie. Huge jalapenos, overly stuffed and wrapped in the best bacon I've ever tasted. I took one bite and immediately sent my wife back in line to get more. I know this is supposed to be about the 'cue, and those ribs and sausage were amazing, but without a few slices of fatty brisket, which I'm betting is outstanding, the Twinkie stole my heart.
We will be back to try the sides and hopefully get some brisket, but if they're out again, I'll just load up on stuffed peppers again.

Great place, great food, can't say enough good things about them. We weren't sure about the line so got there at ~9:30am on a Saturday and we're the first ones. It probably wasn't necessary to get there that early because the next people didn't arrive until probably 10:30, but hey it was fun and we got to watch them prep the food, absolutely no regrets. The guys were super cool and even gave us a few samples while we waited.

Everything was great, but standouts were the brisket boudin and jalapeño cheddar sausages and the banana pudding. Do not go here without getting the banana pudding.... you'll thank me later.

Can't recommend them enough, the only slight negative is that this is basically a food truck with limited seating and no bathrooms... which wouldn't be a bit deal except I took my child who, of course has to go to the bathroom at the most inconvenient times ever..... so our dining got cut a bit short...

I drove solo on a Friday to Decatur for lunch and left wondering if I should just go ahead and move there. The ribs? Fall-off-the-bone magic. The vibe? Smoke, smiles, and sausage with a handshake. You want real-deal Texas BBQ with a side of greatness? You come here. Derek’s got the pitmaster swagger of a rockstar and the beard to match.

Well butter my brisket and call me satisfied! North Texas Smoke isn’t just a name, it’s a culinary warning label; because once you’ve tasted it, your taste buds might file a complaint against every other BBQ joint in a 100-mile radius.

Rolled up around 11 a.m. on a solo BBQ pilgrimage, and wouldn’t you know it, no line, no wait, just pure smoked destiny. I ordered like a man on a mission: brisket, pork ribs, and sausage (because let’s be honest, restraint is for salads). For sides, I went with street corn and loaded potato salad. Minutes later, my tray came out like it had a jetpack strapped to it. Fast, friendly, and freakin’ fantastic.

Let’s talk ribs. Y’all. These ribs didn’t fall off the bone, they moonwalked off. Saucy, smoky, and tender enough to make a grown Texan tear up in the wind. The brisket had bark that barked back (with love), and the sausage? Snapped like fireworks on the Fourth of July.

That street corn? Creamy, spicy, and topped with enough jalapeño to remind you this is Texas. The loaded potato salad? So good I checked to see if my mom had secretly moved to Decatur and got a job in the back.

Before I left, I got to chat with pitmaster Derek, a legend in the makin’. He’s taken a trailer and turned it into a holy site for meat lovers. Word is he’s building out a permanent spot, and buddy, I’ll be back opening day with a folding chair and a fork. Bonus points: his T-shirts are inspired by his own tattoo, and yes, it is spectacular!

So do yourself a favor. Put this joint in your BBQ GPS, shake Derek’s hand, and treat your mouth to a Texas treasure.

I stopped at North_texas_smoke in Decatur, Texas for lunch today. This is a food truck in a parking lot of an equipment rental store. The food truck has plenty of space for customers to order, wait for their food and to eat at one of the picnic tables with umbrella shades. All of the other customers while I was there ordered to go. I tried a few menu items that are my favorites at most of the BBQ restaurants and food trucks that I try.

Brisket: fork tender throughout lean and moist portions with great bark and great flavor.

Jalapeño cheese sausage: Smooth grind with smoky spicy flavor, crispy casing and good meat to cheese ratio.

Pork rib: I had two bones on the end, the one closer to the middle was good, the end was too tough to eat. The crust had great flavor and the fat was mostly rendered on the tip making the one rib I did eat very good.

Macaroni and cheese: al dente spiral macaroni noodles in creamy lightly seasoned cheese with panko parmesan cheese topping. This was great.

I added another stamp to my Texas Monthly Top 50 Texas BBQ Joints passport and found a place that I will definitely return to when I am in the area.

I am really sorry to be one of the only 4 star ratings. But I have to be honest here

First off it’s hard to find! Look for the little food truck behind the tractor place! I thought it did add to the ambience, but I did drive around more than I wanted.

The staff was amazing, very helpful in answering our questions, helping us make our order, and letting me poke around the smokers, taking a look at the next days briskets. (They were beautiful)

My wife and I ordered a two meat plate with two sides. We got the ribs and the brisket with the Mac & cheese and the Cowboy beans. Surprise- here it was 11 o’clock and they had already sold out of the mac & cheese. They were in the process of making more, but that was going to be a good 20 minutes later. She ended up getting the loaded, baked potato salad, which she thoroughly enjoyed.

My only issue was that the ribs were a little undercooked. The meat did not pull off of the bone cleanly. The taste was good. They were a little bit tough. Why I did 4 stars. OK

The brisket was the absolute BOMB!! I have eaten Barbecue from Houston to Amarillo and San Antonio to Texarkana! That had to be in my top three briskets I have ever eaten!! It might be the absolute best.

It is Absolutely worth the drive to go out to Decatur to eat here. Maybe I just had a bad rib day, but the brisket was fantastic worth the trip all on its own.
