What makes Crawfish awesome you might ask! Well here's a good way to figure that out. 1. The purge They really need to be clean. 2. Size matters! 3. Flavor and spice!!
That's what worked for me when determining truly awesome Crawfish!!
I know chicken and dumplings, and what they had at Cajun Joe’s was sad. There were no dumplings in my chicken and dumplings, and the chicken was frozen. I was very disappointed. Furthermore, everything from the table to the menus was wet and sticky. It kind of grossed me out.

I have always had really good luck getting our fill of crawfish but yesterday not so much. They were small,very muddy ,and grit between your teeth. They also were mushy and very hard to get out. So mushy they wouldn't come out. Most went in the trash buckets some even tasted old. Will do MVP in Jasper they have consistently been big and really clean/fresh. Sorry Joe rest in peace but got to call it like it is. The new French fry seasoning is good.
