So I drove to Paris from Hugo to grab a pound of sliced beef because it's been so good throughout the years and I no longer live in Paris.
I went inside and talked to the young man and told him that everything is pretty rough where I live and it's nothing but fat and this and that. He explained that those were pretty good so I didn't pay any attention to it because it's always been so good.
I really hate to say it but this last brisket is tough and it has so much gristle and fat in it. We've been going there since it opened and this is honestly the first time I've ever got anything this rough.
I don't know what happened and if this is the norm but I sure hope not.

Went through the drive thru the other day ordered the 3 meat plate my sides were coleslaw and potato salad I must have came at the wrong time of day the brisket was tough and dry and I didn't even get my coleslaw I received 2 small containers of pickles and onions which I did request and the onions were near spoiling and I received my potato salad it was cold and pasty....I am very disappointed because I've eaten here before and it was amazing in the past....but the quality of food I received this last visit was horrible it was definitely not worth the 24 bucks I paid for

Stopped here on our way to Tulsa and was pleasantly surprised. The 2 meat and 3 meat plates were very generous. The brisket was so good, and nice thick slices. If you're ever passing by, must stop!

Today was our first visit. We will be back! My hubby got turkey, brisket and jalapeno sausage. I got turkey, lean brisket and pulled pork. All the meats were delicious, moist, tender and seasoned with a flavorful rub. The 3 meat meal was a total of 3/4lb of meat. I had baked beans and baked potato casserole. Hubby had the potato casserole and corn. All the sides were delicious and generously portioned. They had a soda fountain with coke products and sweet and unsweet tea. They also offered pickles onions and jalapenos on request. There was a soft serve ice cream machine and 4 choices of BBQ sauce. They were Regular, Golden, Spicy and Rustlers. Regular was a typical BBQ sauce around these parts. Golden had a hint of honey mustard with pickle spices or something, slightly sweet and yummy that I really liked. I did not try the spicy but my hubby did and between the spicy ssuce and jalapeno sausage he was sweating. The Rustlers was my favorite sauce. It was thicker and more bold with a sweetmess to it. Nothing watery about it. It stuck to the meat well and did not drip off. The BBQ sauce dispensary was cute. I would rate this place 10/10. This is my top 2 best BBQ places I have ever eaten at. The staff was friendly and knowledgeable about the food. Dining area was clean. The metal trays the food is served on are warm so even after sitting down, your food stays warm throughout the meal.

We took our whole Dunn Four Ranch Team here to try Scholl's for catering our next Auction and let me tell you the food speaks for itself. The Texas Twinkies, Sausage, mac and brisket were by far everyone's favorite. We have had a lot of Texas BBQ in our day, but this place is top of the line. Ask for Brody if you're catering, he is the best and is so customer friendly, we felt like he was part of the family.

We ordered a smoked turkey and ham for thanksgiving! It was absolutely amazing. I highly recommend.
Excellent BBQ with impressive potions! Brisket and ribs spot on. The price at the register was way cheaper than what I expected so I left a hefty tip!

Great Texas Barbecue! I had the ribs and the brisket combo. The ribs were falling off the bone and the brisket was very moist and delicious. Highly recommend this restaurant!

First time going we were recommended by the man behind the counter the full barn and it didn’t disappoint. It was amazing food. Three meats two sides, for sure enough for two people and had almost enough for another person. The staff was very helpful and friendly. Absolutely loved that they were playing Christian music! Will most definitely be going back for the best BBQ in Paris.

Hands down best BBQ on this side of east Texas! Do not I repeat do not miss out on this authentic slow grilled, savory, juicy, full of smokey flavor, tender falling off the bone, and delicious BBQ!!! Oh and they give you plenty 😃 you get your money worth.

Extremely Disappointing Experience — Dry Meat, Missing Items, and Spoiled Sides
I really wanted to like this place, but our recent visit to Schol’s BBQ in Paris, Texas was a complete disappointment. The food was honestly some of the worst barbecue we’ve had in a long time.
The brisket and ribs were unbelievably dry — tough, flavorless, and clearly overcooked. There wasn’t a hint of moisture or smoke flavor left in the meat, and it tasted like it had been sitting out for hours. To make matters worse, we ordered a baked potato, but when we got home and unpacked everything, it was missing. Only then did we find out they had “run out.” No one bothered to tell us or offer a substitute — which is just bad customer service.
The coleslaw was the final straw. It was sour and clearly spoiled, with that unpleasant smell and taste that makes you immediately worry about whether it’s safe to eat. We actually threw it away because we didn’t want to risk getting sick.
After this experience, we’re honestly concerned about the food handling here. Between the dried-out meats, missing items, and spoiled sides, it’s hard to trust that anything was prepared or stored properly. We won’t be coming back, and I’d strongly recommend double-checking your order — and your food — before leaving if you decide to give them a try.
I come to paris for this place.... Just great BBQ! Highly recommend trying it...wait was not long... I always get roo much.
