The location is really cool housing several food trucks, mostly Hispanic and Latin American food but they also had dessert trucks and a bar set up. Bucchia's has a small menu but lots of flavor!! My husband and I greatly enjoyed our tacos and his quesadilla had a nice cheese pull. I tried their taco trio and they were very nice and happily changed the al pastor taco for a mushroom one. Very good! I really enjoyed the Lengua taco. So soft and tender. The Al pastor had some nice char and did really well with the pineapple. The tlacoyo was interesting and I'm glad I was able to try it. It's been in my foodie bucket list for a while and it makes me happy when I get to check something off. The service was great. Was able to try Bucchias which is located in the food park in Gosling Rd in Spring. Double hands down for the tortilla options being in maíz azul! Very authentic and flavorful! I'll def be back for more and to try the other many options in the food park!
