We had a corporate dinner here and they didn't disappoint. Food was amazing, servers were wonderful and the environment was enjoyable.

To start out the food was great but then the visit went downhill. We ordered salads, no salads were served. The waiter/bartender seemed to forget we were there. When we asked for a doggie bag everything was dumped into 1 cardboard container including the creamy Cajun Seafood dip, no care was taken. When you pay $70 for a steak, you expect the service to match. The order for the couple sitting next to us was not correct either. We did sit at the bar and it was Tuesday 12/2. We were there for our anniversary.

Came here for the first time with family, we got a special room off to the side where it was quiet. Best part of the experience was our server, Cullen. I had shown up about 20 minutes earlier than the rest of my party, and he took the time to speak with me while I was waiting. He was a fantastic server and I really appreciated how genuine he was. The food was good. A few things to note: the prime rib could have used more seasoning (although it was perfectly cooked), the bread was odd (not normal fluffy bread but crunchy and hollow) and the lobster mac n' cheese wasn't really cheesy and didn't have a ton of seasoning. But the service was great, and everyone enjoyed our time there. Again, huge shoutout to Cullen!

We were really excited to take my husband here for his birthday. His sister and her boyfriend even flew in from the West Coast, and we were all looking forward to trying this place after I found it online — it had great reviews, so I thought it would be a wonderful experience.
I made our reservation a week in advance, but when we arrived, the hostess at the counter was training, so we had to wait a few minutes for our table. No big deal, but then another staff member came up and said she needed to get our table ready — which was confusing since that’s the whole point of making a reservation. Still, we didn’t let that bother us.
When we were finally seated, they asked if our reservation was for five people (it wasn’t — it was for four). Our waiter came by and asked for our drink orders, but we couldn’t find drinks on the menu. I mentioned we’d never been there before, and he said the drink list was on the iPad. He was very short and not at all personable — maybe he was having an off day, but it definitely affected the experience.
I noticed the table behind us also mentioned they were new, and their waiter was amazing — he explained everything, even showed them the cuts of steak. Unfortunately, we didn’t get that kind of service. Three of us ordered the seared scallops — big mistake. They were overcooked, chewy, and so salty it actually burned your throat. I couldn’t even finish one. The dish came with four scallops, and I barely managed half of one.
Another staff member came by and asked how our meals were — I told him they were terrible, and he just walked away without saying a word. My sister-in-law said her tempura roll was good, at least. The bread, however, had a burnt flavor.
I don’t mind paying for quality when both the food and service are worth it, but unfortunately, neither was. For a $400 bill, we expected a much better experience.

Ridiculous. This used to be our favorite place in Waco, a spot we never missed whenever we were in town. We always brought our son and his friends here and had planned to bring 16 family members for his graduation dinner. After this last experience, we will never go back.
The food was good, but absolutely not worth what they are charging. The service was fine, but nowhere near the level you’d expect at the prices they command. And the drink prices? Outright insulting. $30 for a Grey Goose on the rocks (a double) — when even in New York City’s most expensive steakhouses, a double costs $24. For Waco, Texas, it’s indefensible.
It’s clear they are taking advantage of Baylor families and out-of-town visitors who don’t know better. That kind of price gouging completely overshadows anything positive about the food or the atmosphere.
We left disgusted and disappointed. What was once a family tradition has turned into a money grab with no sense of value or fairness. They’ve lost loyal customers for good — and anyone else considering it should think twice before wasting their money.

Addie T was our server and couldn’t be more delightful! Made excellent recommendations and everything was delicious! We enjoyed the Downtown Waco sushi as an app. Off menu filet and ribeye were cooked perfectly and seasoned just right. The bartender suggested a local whiskey that my husband really liked and a red wine that went great with my steak. I was able to add the burrata to my filet and it was also very good. No complaints. Quiet and well appointed dining area in historic building with charming touches. Would definitely recommend to anyone looking for a nice dining experience. Walking distance from Hilton.

Heard word of mouth that this Steakhouse was excellent. Decided to stop by and try it. Immediately grated by professional mannered and dressed staff. The ambiance of Diamondback's gives off a upperclass/western vibe. I was surprised they'd allow riff-raff in without reservations (I was riff-raff). I had the Akaushi New York strip, excellent cut, perfect savory flavor. Definitely worth the trip to Waco.

Amazing service, cozy vibe, and a hidden gem on the menu!
DiamondBack’s was an awesome experience from start to finish. The staff was super friendly and made us feel right at home. The atmosphere is warm, elegant, and perfect for a special night out.
But the real star? The Fried Lobster! It’s not on the menu, but if you ask for it—you’re in for a treat. Crispy, flavorful, and absolutely delicious. Highly recommend giving it a try if you’re in Waco!

Diamondbacks is such a great restaurant! I went for the first time and order the best seabass I’ve ever tasted in texas. our waiter was super friendly and was very thoughtful and caring for my severe nut allergy which is always highly appreciative as you don’t get that a lot in restaurants sometimes. the Caesar salad was amazing aswell!

A great dining experience. The staff is attentive, the food is wonderful, with nice sized portions. Everything was enjoyable. Don't go if you expect a Top Quality steak for chain restaurant price. This place has the best steak that is well worth the price.
Had a great time and great food. Our server Anthony was friendly and knowledgeable and made the best tableside banana fosters ever!! We will definitely be back.

Good restaurant with a good vibe. I was recommended this place because they told me that it was the best steakhouse in town! We ordered two of the fish dishes and both were pretty solid.
