Ate here a couple years ago and it was better back then. They had a fire last year and have a temporary location now until the new place is built. Try the smashburger, it was super juicy. Mac and Cheese texture is off, not very creamy and lacking flavor. It’s more thick then creamy. But I hope the best for you guys. Super nice staff !

Ordered food. Drive an hour back home and order was completely missing a whole chicken. Called to tell them but they had closed 1 min prior so no answer. Left a message but no one returned my call. What food we got, which was not enough to feed everyone) was ok. The to go order also did not have any pickles, onions, bread or bbq sauce with it. The little food we got was $106 dollars and i will NEVER go back and i will let everyone i know.

Stopped at Helberg BBQ in Woodway a few miles West of Waco for lunch today after someone recommended it on one of my recent posts.
-Brisket was flavorful and edible end to end. I usually go for lean and this time went to my backup of "in the middle" which their staff cut perfectly with the point and flat in one slice. The bark was light like I prefer and the smoke ring was there but not too heavy.
-Pork rib was nearly perfect with half releasing from the bone and the other just firm enought to bite while on the bone. They did not dust with seasoning after cutting like I have seen some restaurants do to bring flavor to the meat and it did not need it.
-Sausage was flavorful with having Jalapeno cheese and regular but was a little too cool so the cheese was not melted. The grind was great and smooth.
-Chimichurri slaw had good flavor with a basic slaw but using chimichurri as the dressing.
-Banana pudding was light with the whip and pudding mixed together and the wafers being smoked so they had a cinnamon/ brown sugar taste.
Overall, for a food trailer that you order from that has another food trailer next to it for prep and a good side smoke pit behind it in a gravel parking lot it was much so much better than expected. I see many convenience upgrades on this property in the near future due to how quickly they breezed through their lunch rush. The location is on a busy road with visibility from both directions.
I would definitely stop back for the brisket, rib and banana pudding!

Absolutely amazing bbq. Home cooked, well loved and our baby’s first taste of real food was Helberg pork spare ribs.
This is the best sliced brisket sandwich I've ever had in my entire life! Try the jalapeno sausage! Goodbye on Wednesday and get a $30 rack of ribs! This place is the best barbecue place I found locally!

Didn’t get a photo of my food before I ate it, but it was amazing! Their make do location out of their food trailer since their kitchen fire is a well oiled machine & I had my to go sandwich within 5 minutes at 12:30 on a Saturday! The spicy bbq sauce is the best I’ve had!

We wanted to sample a few of the different meats. All the meats had good flavor but they were cold. The sides we selected weren't what we expected but then again we were there for the meats. Seating is outside under the shed with lots of seating. It was around 90 that day and chiller fans were not running so it was a little warm. Not a bad price for all the food we got.

Went to eat lunch today it was delicious. The lean brisket was great. The ribs had great bite cooked to perfection. The Mac and cheese and the beans are different from most I enjoy the special take on those classics and having mustard based potato salad. Banana pudding is made with ginger snaps and that was awesome too pleasant surprise. All in all I love them separating themselves from the norm with great food and a great experience.
