The best meal of my Cottonwood Canyon ski trip was at Eight Settlers. I had the catch of the day, halibut, and it was a delicious presentation, with a tomato cream sauce, fingerling potatoes and just right asparagus. These settlers are heads and shoulders above nearby Porcupine and Bandits.

We called ahead to check on the wait time for two on a Friday night and the hostess who answered almost snorted laughed at the question. Clearly this place isn't going to be hopping on the weekends at the tail end of ski season. Seating was all in the upstairs area, and honestly I really digged the vibe of this place. Views of the valley are incredible and we were seated right next to the window. Decor is very rustic, metal brick and dark wood and warm lighting. Seating was moderately comfortable. For drinks I had a pour of their 5 year aged bourbon, 14 dollars for a 1.5oz pour (thanks Utah!). I drank it neat and it was absolutely average. Think Wild Turkey 101. Not super smooth and a lot of leftover sugar (the nose is almost all brown sugar). We ordered the pork belly and the bone marrow to start and honestly the starters were very good, especially the pork belly. The pickled vegetables were very nice also. Bone marrow was good but portion was tiny so a lot of leftover bread, so ate it with the leftover salt and mustard. Entrees were mid to poor, I had a Caesar with chicken and it was quite underdressed and the chicken was super dry. For a 20 dollar salad I felt really disappointed, I added a heaping helping of extra dressing and it was passable. Girlfriend had the steak and it was well cooked, but the potatoes and greens for sides were almost inedible. Really forgettable all around on the entrees. Service was okay. The place had less than 10 people in there but our server only came by once for refills. She spent a fair bit of time talking to her coworker. I really wanted to love this place because the location and views are stellar, but the food just isn't good enough for a return trip. Stick to apps if you go. Maybe the $26 burger on the menu is better? Doubt it.

Been here several times and have given this place more stars in the past. Can't say I'll ever be back. Food was half cold, dry, and soggy at the same time?? Also wish we had a different server.

Enjoyed social hour at Eight Settlers last night with work colleagues. Rachel was great at coordinating our event. Rachel is detailed oriented and personable. We received great service from Monika for our large group of 20. She was attentive, replenishing appetizers as needed and seeing to our drink orders. I highly recommend Eight Settlers for your next event or social hour. Beautiful ambiance and Mountain View’s. It’s an easy commute from downtown SLC or Park City.

Great place to visit after a day of skiing! The food is creative and delicious! My husband and I split a salad and sandwich. The short rib grilled cheese is more of a short rib grilled sandwich but it does not disappoint!! It's flavorful and tender and made perfectly! Bocek was our server and was so great! Very attentive, friendly, patient and kind. Would recommend him! Dinner is now served upstairs, last year we ate on the main floor. The entire place is beautiful and an open concept. Everything looks new and fresh! Would definitely come back whenever we're in town!

The atmosphere here is amazing. Old style speakeasy feel with relaxed vibe. Service was excellent and friendly. Staff was helpful and kind. The food was excellent and cooked perfectly. It all came out hot and the presentation was five star all around. The Buffalo cauliflower was the perfect level of tanginess and spice and the dill dip it came with matched expertly. The short rib grilled cheese was beyond juicy and tender and packed with flavor. The fries were crispy, light, and tasted like potato not oil. The airline chicken looked fancy and was cooked well but could've used a bit of salt or flavoring. The mashed potatoes were divine. Finish it all off with the perfect dessert, the cookie sundae which had it all. I felt the pricing was on point and we felt the entire email was worth what we paid. Definitely recommend coming here if you haven't been or revisit it if it's been awhile.

Don’t come for dinner. It’s a cool vibe and a great place to have drinks, but the food is mediocre for what you pay for and takes REALLY long for it to be made.

Had the perfect Valentines date tonight. Our waitress Emily was great and offered advice on the menu. I had the flat iron steak and loved it. I don’t know why reviews are complaining about the HUGE amount of potatoes. I’ve been many places that don’t offer a side dish at all. Who the heck complains about potatoes? Drinks were fantastic. The GIN was on point. ?

Went here after multiple people said it was better than Porcupine Grill next door. I would say it’s just as good, not better, but equally amazing as Porcupine. Def will be a hard choice next time I’m in the area for dinner on which to go to for dinner. Food was great, drinks were even better, service was amazing too. My only recommendation is to add jelly shots to the drink menu!

It was a wonderful dinner. It's always a good sign when everything you order is fantastic and pretty much devoured. Kaylee our server was on top of her game and should be commended on it.

We always enjoy going to this restaurant. I have had some of my favorite meals here. I feel the quality has gone down a little in the past few months but over all still good. Service is always top notch, atmosphere is lovely, the cocktails are exceptional, food was just not as phenomenal as it's been in the past but still good. I would still recommend this place.

Bocek was the most amazing waiter ever! Great conversation, very professional and friendly. Great speaking with him about Turkey and the Turkish culture and our shared enthusiasm regarding Turkish cuisine. Whiskey choices were good and the food was amazing!
