I dream about these quesadillas when I leave Moab for the school year :) I think this is great stop if you’re from out of town AND if you’re a local, like me, that doesn’t usually eat out because food is crazy expensive these days, make an exception for these exceptional quesadillas!! hahaha

These quesadillas were STUFFED with creative and flavorful ingredients! Definitely juicy and drippy because of all the contents. The food truck area is a colorful respite from the summer heat with its mist.

This is such a cool little area in Moab, where all the food trucks set up shop and a very small area. It’s covered and cooled with mister’s now and it’s just a very awesome atmosphere. I’m here in the middle of the summer 98° today and I felt good just sitting there having dinner at the end of the day and some shade and mist. I got the enchanted chicken quesadilla and it was very good. It was also very very loaded, I kinda like my quesadillas with a little less stuff and a little more cheese. But I would consider this superduper fancy for a quesadilla. This also is also very good with it. Not disappointed, actually very pleased with the meal and the taste.

The quesadillas were so good we just had to come back!
My friends and I went to the food truck park for dinner last night, and we each tried a different truck. Everyone was jealous of my quesadilla! It was so good. It was full of lots of chicken, cheese, beans, peppers, and onions. I couldn’t finish the last piece so I took it home for lunch the next day. In my opinion, it was far better than anything my friends had gotten.

Absolutely awesome quesadillas, stuffed so thick it doesn't even resemble a quesadilla anymore. Got the chicken one and it was packed full of pulled chicken. Everyone ordered different dillas in line so I suspect they are all very delicious.
