Date inspected: Dec. 28 Total violations: 12 No person in charge has oversight of the cooking, cooling, and general temperatures of food being prepared within the facility. The person in charge was not able to provide a certificate for a certified food protection manager. The facility does not have verifiable means of an employee health reporting policy. EHS observed a makeshift ashtray with spent cigarette butts on the shelf above the line. A pack of cigarettes and a lighter were also observed next to the ashtray. There is no hand soap at the handwashing sink at the bar. The facility does not have any verifiable means of parasite destruction. Raw shell eggs were found stored over ready to eat foods in the reach-in cooler in the back portion of the kitchen Several items within the reach-in coolers were above proper temperatures. No date marking of food items was found at the time of inspection. A full bag of whole raw chickens was observed thawing in a pan of stagnant water at the prep sink. EHS observed multiple areas where rodent activity is present. No traps or other forms of pest control were found to be in use. Several open containers of dry goods were observed open, without tops/coverings
