The Yaki-imo brulee is my absolute favorite and my go-to. Overall the soft serve is just amazing, but the slight sweetness and flavor the potato gives it is a level up for the ice cream. I’m super sad this places closed :(
Great place for some simple and creamy sweet treat. They're inside another establishment. When you walk in go straight to the wall and they have their ordering kiosk there.

I recently visited Indigo Cow in Bellevue and tried their Hokkaido ice cream with the sweet potato crumble, and it was absolutely delightful! The Hokkaido ice cream had a rich, creamy texture and a subtle sweetness that felt indulgent without being overpowering. Pairing it with the sweet potato crumble added a warm, earthy sweetness and a lovely contrast in texture. The quality of ingredients really shines through in every bite. I’ll definitely be back to explore more of their unique flavors!

The mochi really not fresh and probably refrigerated as it was not very chewy.
The matcha ice-cream was okay, just not creamy and rich enough.

Disappointed at the quality. I ordered a Hokkaido milk ice cream with hojicha sauce and dangos. The dangos are NOT the fresh ones like the one at Seattle location. They are old refrigerated ones from probably uwajimaya.
These dangos are $2. Totally ruined my ice cream. Please don’t offer things that ruined your own ice cream

Service was great. Everyone liked their soft serve but me. To be fair I ordered the matcha because I figured it's one of their specialties so I should try it. However, I don't really like matcha because I think it tastes like I'm eating grass. To other people they may really love it so I stuck with the 5 star because it's not their fault I don't like matcha. Next time I'll try something else.

Indigo Cow is a fantastic destination for anyone who loves soft serve! The ice cream is incredibly rich and creamy, and they have an amazing variety of toppings to personalize your dessert just how you want it. Although it might be a bit pricey, the quality and selection definitely justify the cost. Whether you're craving a classic flavor or eager to experiment with something different, Indigo Cow has something for everyone. I highly recommend it to all dessert enthusiasts! I went with friends and they made our orders super fast! I ordered a regular matcha in a cup with MRB (mochi, …&….i forget lol).
