Burnt Side Down in Bellingham was amazing. I ordered the grilled cheese with bacon and it seriously exceeded expectations. The cheese crust on the outside was so delicious — perfectly crispy, golden, and packed with flavor. The bacon was cooked just right and added the perfect salty crunch. Simple comfort food done at a really high level. Great atmosphere and friendly staff too. I’ll definitely be back for another one.

It’s no coincidence that this place earned Best Food Truck in 2024 and 2025. I absolutely loved my Italian Stallion with crispy cheese spilling out of it. They allowed me to substitute the rosemary bread. One friend got their original Burnt Side Down sandwich, another got the Send It. All were fantastic. The side of tomato soup was perfect. I highly recommend!

Great place for grilled cheese sandwiches 🥪 of different varieties; had the grilled cheese jalapeño poppers and it was tasty; Cheese was flowing off the bread; Inside was nice and soft It’s a food truck but plenty of standing tables and next to Stemma brewing and you can eat in there with seating

The Caprese, I dare say, is the best grilled cheese I ever had. We also loved the Gorgonzola! It was huge and filling. The cheese is overflowing and the edges are cripy and crunchy!

Located next to a brewery, there is plenty seating and beer available. Friendly staff at both made this a perfect spot to grab a bite.

Decent portions for the price, and it’s also nice that they share space with a few other food truck options and a brewery for a lot of variety (ie going with picky eaters or with different palates)
As a former student in b’ham I wish this place and concept opened 15 years ago! If you’re in the area it’s definitely worth the visit!
