Favorite place in Bellingham! Very unique flavors and options. We always get the vegan/vegetarian Loco Moco and vegan Ginger Fried Rice. Super-fast service and large servings.
The Bulgogi Kimchi quesadilla is amazing.
Some of the best food in Bellingham.

We ordered Ginger Fried rice with Lemongrass Pork, extra meat and spicy. Added pickled onions and an egg on top. So delicious. One order was enough for 2 people. So flavorful, didn't take long and all ingredients tasted fresh. Will definitely eat here again.

If you’re looking for the ultimate quesadilla experience, look no further than Outpost Eats! Nestled at the bottom of a mountain bike trail on Galbraith Mountain in Bellingham, this food truck serves up quesadillas that are nothing short of phenomenal. Each bite is packed with cheesy, savory goodness that leaves you wanting more.
The ingredients are fresh, and the flavors are perfectly balanced, making every quesadilla a delightful treat. The best part? They are so brat—bold, rich, and tantalizing. It’s clear that a lot of thought and care goes into each order.
The location couldn’t be better, especially for those finishing a ride on the trails or visiting the nearby headquarters of Transition Bikes. Plus, it’s a great spot to grab a bite while you watch the bike dorks debate the finer points of gear ratios and suspension settings. The service is friendly and quick, and the prices are reasonable for the quality you receive. If you’re a quesadilla lover, Outpost Eats is a must-visit. Highly recommend!

I had the Coconut chicken salad. It was, hands down, one of the best salads I have ever had. I would post a picture but I ate it too quickly! Can’t recommend highly enough. Will definitely be back.

Randomly found this food truck up by Bellingham and WOW is it delicious. Pulled pork sandwich is packed with flavor, sauce, and just the right amount of spice with the pickled jalapenos. Also, the sandwich was packed with meat and fillings so you don't feel like you're actually getting value for your dollar.
Highly recommend grabbing a bite to eat if you're near this food truck.

Stopped here on the whim. Amazingly and surprisingly great food in a great spot. Definitely come check it out. The quesadilla and the sandwich were amazing. My son loved the sandwich. My wife and son said the quesadilla was the best they’ve ever eaten. Don’t be fooled by the name food truck. It’s actually a new construction building that houses a nice mountain bike shop with the food truck outside and a microbrew inside the bike shop.
