We've been twice now and we would say this place is a gem. If do nothing else, get the KPop Chicken with the house made hoisin sauce, im still dreaming about it.

Had brunch reservations for 4 and that wasn’t needed as we were the only people there. Food took 40 minutes to arrive. 1 order was completely wrong, and by the time the correct plate arrived, the rest were done eating so we got it to go. No comp offered. 2 people got waffles with their breakfast and found them to be remarkably dry. The halloumi is sliced too thin so it tasted like the top of cold pizza. The potatoes and crostini were good and the plating was excellent, thus the 3 stars instead of 2. Dinner might be better, but we won’t be back for breakfast .

I was excited to try The Witlof, and was very pleased with the food. We ordered the K-Pop Chicken app, crispy, tangy delicious.

For entree the cuadril a la plancha, med rare. Steak was cooked perfectly with excellent crust. Also the bibimbap, first time trying it and loved it, other reviews more familiar with the dish say the flavor profile was off...maybe it was, still a very fresh flavorful rice dish.

From the reviews it seems this was a 1 off night, but, the front of the house had only 1 server so service was really slow and ruined I believe a potential excellent experience.

I would recommend trying The Witlof, I will definitely return. Hopefully on a night that the front house staffing is adequate.

My home town of Walla Walla continues to surprise me. This new main street restaurant is large and very nicely renovated. The owners are in house and clearly dedicated to their eclectic menu--how does Basque and Korean dishes share with Dutch foods? So nice to be happily surprised and taken on a world wide taste journey. We are vegetarian so I will focus on those dishes, but I think any tastes will be surprised and happy here. This joins the top tier choices in our top tier town.

The kitchen knows what they're doing. Interesting dishes and unique flavors conveyed care for their food and guests. Front of House, however, needs significant work (except the host, she was great). We'll be back, and hopefully the service will improve for next time.

Fabulous experience at The Witlof. Loved the Bacalao Ahumado, the croquettas, and The Airliner! To top it off, they offered a gorgeous Portuguese red wine—Quinta de Chocapalha 'Vinha Mae'”—that was so good I'm trying to locate more bottles. Fabulous and friendly staff. Better than TMacs, IMHO.

Rural Washington State

A great menu with lots of choices, including vegan. Special tonight 16oz ribeye. Nice atmosphere in downtown Walla Walla. Quiet enough to talk. I'm going back to try the duck and lamb. I had the red snapper, wonderful covered in couscous. The Royal Tenderloin was excellent. Only 2 deserts, but both were great. A moderate selection of wines, but since mostly unusual Spanish wines, another fun wine adventure.

Enjoyed pintxos de pato, papas bravas and bubbles. Food was fresh and tasty. Had a lovely conversation with Claire (proprietress along with her husband, the chef) about food in general and Basque region in particular. Knowledgeable, and focused on presenting good food, scratch made. Looking forward to exploring more of their menu.

We shared four appetizers, each one bursting with flavor and beautifully prepared, then followed with entrées and cocktails that were just as exceptional. Every dish was creative, perfectly executed, and absolutely delicious. The atmosphere, service, and attention to detail made the evening truly special. I can’t wait to return — and I’ll be enthusiastically recommending Witlof to all my friends!

I had the opportunity to dine here a few weeks ago and was excited to try a new option in town. As a Korean who has experienced Korean cuisine from various regions across the country—including fine dining and a few Michelin-starred restaurants—I have to say that the food at Witlof is far from what we have in Korea.
When I took a bite of the bibimbap, it didn’t taste like anything I’d had before. Bibimbap is all about the harmony of various namul (seasoned vegetables) with hints of garlic and sesame oil, complemented by simply seasoned ground beef, all brought together with gochujang. Witlof’s bibimbap was completely deconstructed and tasted odd when mixed together. The beef had a flavor reminiscent of Northern Chinese cuisine—I’m not sure why. The rice had crispy parts, which are typically found when bibimbap is served in a dolsot (stone pot), and while they seemed to intentionally mimic that effect, I found it strange in this context.
I’m generally open to fusion dishes when they’re executed well, but this missed the mark. If something is called bibimbap, it should taste like bibimbap. Unfortunately, this dish seemed to lack a fundamental understanding of Korean food. Also, the price is too steep.
