Gorgeous place with great views! Wines were wonderful and very decently priced. Our hostess was fantastic, knowledgeable, and very friendly!
Another one of the best Wineries in the Yakima Valley! Excellent, if not outstanding selection of red and white wines. Their Merlot and Reisling are very tasty and reasonably priced! Kaleb, the Winemaker, and his co-worker, Janet, helped provide an excellent tasting experience! Way to go!!😎😎😺😀
Love a dog friendly winery! Enjoyed a tasting on the beautiful grounds, and learned a lot about the history of the AVA and winery.
Went for tasting of some red wines and I discovered here is a winery with a ton of history. It seems like they are really devoted to revitalizing the place, as the new administration members are solely dedicated to producing quality wines from the Rattlesnake Hills. Ashley, the main tasting room and back of house manager did a fabulous job of showing me the wines. She seemed committed to learning the history and cooperage information on all of the wines since she started working there. I really felt as though she made it a fantastic experience, and she doesn't make you feel scared to ask questions about the process. I also got to meet their new winemaker Samantha, whom has produced wine at a few other places in the area over the last decade and has won numerous prestigious awards in the valley in the process. She is very down to earth, positive, bubbly, and insanely kind.
The grounds are beautifully kept, which is great if you have kids as they have a huge lawn and a breathtaking view of MT.Adams.
Overall I had a great time conversing with the staff and tasting their wines as everyone was incredibly friendly and informative.
They have some fabulous wines, go check them out!
Review of Hyatt Vineyards Saperavi Rating: ★★★★★ (5/5) I recently had the pleasure of tasting the Saperavi from Hyatt Vineyards in Zillah, and it was nothing short of extraordinary. From the moment I poured the deep, ruby-red wine into my glass, I was captivated by its rich color and enticing aromas. On the nose, the Saperavi reveals an impressive bouquet of dark berries, particularly blackberry and black cherry, intertwined with hints of dark chocolate, spice, and a subtle earthiness. It’s a complex profile that promises a delightful tasting experience, and it certainly delivers. Taking my first sip, I was immediately struck by the wine's bold, full-bodied nature. The flavors are beautifully layered, with luscious fruit notes complemented by a touch of oak and a peppery finish. The tannins are well-structured yet velvety, providing a perfect balance that elevates the wine without overpowering the palate. The acidity is just right, ensuring a refreshing quality that invites you to take another sip. What truly sets this Saperavi apart is its remarkable depth and complexity. It’s a wine that evolves with each sip, revealing new nuances and flavors as it breathes. Whether enjoyed alone or paired with a hearty meal—think grilled lamb, rich stews, or even a dark chocolate dessert—this wine stands out as a versatile companion. The craftsmanship of Hyatt Vineyards shines through in every aspect of this Saperavi. It’s clear that the winemakers have poured their heart and soul into creating a wine that not only pays homage to its Georgian roots but also embodies the unique terroir of the Yakima Valley. In conclusion, Hyatt Vineyards’ Saperavi is a must-try for any wine enthusiast. It’s a testament to the potential of Washington wines and a delightful experience that I highly recommend. I can’t wait to return to Hyatt Vineyards to savor this gem again!
We joined a couple months ago. They are in the process of revamping their wines and tasting room. They even have Harvest Home space for RV's! And yes, the wines are excellent!

Labor Day Weekend Night #2. HarvestHosts Stay #4
What a wonderful place to 'camp'.
We pulled in at about 3:30 after stopping at another winery then we had lunch at Freddy's Burgers (local and top notch) and got some supplies at the local Lep-Re-Kon Harvest Foods grocery store.
Von and I each did a tasting and then took two glasses of frozé (a wine slushy) and two bottles of wine back the van.
We were able to camp between the winery's beautiful lawn and the grape vines looking west toward Mt Adams and what would be a gorgeous sunset.
With the amazing view and the included electrical hookups, Hyatt is definitely a top choice for another stay. The only reason we might not next time is because there are at least ten other HH wineries in the Zillah area to taste at. :)
I recently had the pleasure of visiting Hyatt Winery and wanted to express my gratitude for the exceptional experience provided by Ashley. Her deep knowledge of the grapes and the winemaking process was truly impressive and made the tour both informative and engaging. She expertly guided us through the various grape varieties. The wine tasting was a highlight, showcasing the quality and craftsmanship of the winery's offerings. (Try the slushy! On a hot day, super refreshing)
Hyatt Winery itself is a stunning location, and I’m excited to see how Ashley's contributions will shape its future. The collaboration and rich history of the winery only add to its charm. Thank you, Ashley, for a memorable visit—I look forward to seeing the continued success and innovations at Hyatt Winery.
Amazing tour, delicious wine. We all had the best experience!
Absolutely gorgeous winery! Ashley, the general manager, greeted us in the beautiful tasting room and we were able to taste their delicious wine. I had to buy a few bottles, it was too great not to!
We were able to walk through a few rows of vines… we’d be there all day exploring it all… and got to see some barrels of wine, waiting their turn for a tasting!
Easy to access, we were pulling a trailer and had plenty of room to get there comfortably and park. We will be back!

If you are looking for a personalized experience at a beautiful winery with great wines and a professional knowledgeable staff, visit Hyatt winery. Very different from other wineries where they pour you a flight, with notes about the wine printed on a piece of paper and provide no service. Ashley at Hyatt provides exceptional wine knowledge and personalized friendly service.
Ashley was amazing. She helped us selected a wine we liked and was polite, knowledgeable, and most of all made us feel welcome and comfortable.
What a lovely tasting room experience I hadn't set foot in the Hyatt winery for countless years and just revisited today. I was greeted with a smile by their new General Manager Ashley, who treated me with the utmost kindness and respect. She gracefully guided me through the new wines, made by new winemaker Caleb Foster, the new branding and labels and detailed out all the rich history and vision moving forward for this remarkable, legacy winery. HYATT is a place to add to your next wine tasting tour in the Yakima Valley. The new wines are stunning, the views are amazing and the space is welcoming. A perfect place to bring a picnic, play cornhole, and relax...Ashley said they are open Thurs-Mondays 11am-5pm.
Wines are getting better!
