I’ve been in the coffee industry for over a decade, and this Dunn Bros needs to up their training protocol in a real way. Here’s my feedback as an experienced roaster/barista:
My espresso was astringent, suggesting the beans were under-developed during roasting. The smell of the roasting coffee was that of burnt toast, which makes me think they are way over-filling their roaster with raw beans, which would explain the under-developed espresso beans.
The brewed espresso had a thin mouthfeel and a sour taste, suggesting under-extraction during the brewing process. If the espresso brews quickly and has a watery consistency, throw it out, do not serve, that’s a major sign of a low-quality shot. Shot should take no less than 25 seconds to brew, with at least 5 seconds between starting the pull and the shot coming out of the portafilter. There was no crema on top, either, which also suggests under-extraction. I recommend a thinner grind or a harder tamping, or both.
I recommend dialing in the espresso at least weekly, it’s worth the extra time for the higher quality. I would also highly suggest hanging up a flavor wheel and a brewing compass for easy reference.
Finally, this might just be a culture shock thing, but every employee I interacted with was really unfriendly. I’m a Minnesotan, and we’re known for being extremely friendly, especially to patrons of our businesses, so as stated, this could just be a culture shock issue, but it did make for a less-than-pleasant visit.
On my next trip to Hudson, I think I’m going to try to find another coffee shop to visit.

Without a doubt best dunn bros!It is so cute and cozy in here!Their menu variety is great and actually the food is sooooo good!I love their drinks always and am never disappointed. And the people who work there are always super friendly! I just love this spot on our morning summer walks downtown!
