Pilot Project Brewing Milwaukee

This place is the best! Have been here a couple times in the past and were in town for a bucks game so decided to have dinner in here before. We got free parking right outside the doors, had amazing food and drink with a great view of the stadium and even got a tour of the brewery from Alan! He knows his stuff. Was very awesome experience and just a short walk to the stadium.

We took a tour then got dinner. Avery, our tour guide, was very friendly and informative. It felt like a friend showing you their home. For dinner our server was Evan. The food was great and Evan was on attentive and helpful. Great place all around! Raises for both Avery and Evan!!!

Alan was kind enough to give my group a tour of the canning facility attached to the restaurant and it was amazing. He was very informational, professional and I could tell he knew a lot about the business Pilot Project does. 10/10 recommend for food and beer!

I want to go back, because the food and drink was so good - the space is gorgeous - and there are so many good review.

BUT - Pilot Project, please work on the service you are delivering. First time we came in on a Sunday at lunch - we were one of two tables. We had our waters and our waitress never came back. After 15 mins - I flagged the other waitress down as she was sweeping floors. Our original waitress was walking around and talking to staff - never came back and never issued an apology after the only other waitress in the room took over our table.

We tried again four months later - on Sunday for lunch. Came with a friend. Sat down at a table. Different wait staff and busier dining room. Same thing - waitress gave us waters and after 20 mins of her not returning, we gave up and left. This was all back in 2024 and we've been hesitant to try again. The beer and fries are calling my name, but I also don't feel like being snubbed again.

Pilot Project did an awesome job hosting my company holiday party with 25 people. Planning was very easy, the food was delicious, our server and the rest of the staff were professional, and everybody had a great time. We had a few guests with special diets and they accommodated without hesitation. Couldn’t have asked for anything more!

Rooftop is a great spot for a party especially if you are hosting out of towners.

Outstanding service with an incredibly patient and helpful waiter. With multiple food allergies in our group the chef came out and answered every question including having an annotated menu detailing which foods were allium free. On top of that the food was delicious and the beer was fantastic! Tons of variety and very well executed styles I was regretting being the designated driver. Highly recommend and I can’t wait to come back.
