The closest bagels I’ve found to NYC bagels! They’re ooey gooey and crunchy all at the same time. Never a miss. Only note is I’d skip the coffee, not my fave and usually a little bitter.

Might be the best breakfast sandwich I’ve ever had. Fresh fried eggs, crispy-meaty bacon and melted cheese on a fresh. Everything bagel. Couldn’t ask for anything more on a weekend morning. Food truck park setting is a great vibe as well.

This place is a must if you’re in the area! The bagels are made daily and you can tell! Any of their bagels are divine but their breakfast sandwich bagels are incredible. Oh and don’t forget the jalapeno cream cheese! Wow! I anxiously await their new storefront location in Wauwatosa to open since it will be much closer for me!

Ruby’s Bagels are hands down the BEST bagels in the city! I absolutely love that they are made fresh daily so there is no need to toast them, as toasting takes away from the fresh, chewy goodness ☺️ Not only are the bagels, bagel sandwiches and coffee top notch but the staff is always friendly! Ruby’s is a must if you’re a bagel connoisseur!

Service stinks. Bought two bagels with cream cheese. The smear is $2.50. They did not toast the first two or ask. Bought two more so I could actually try these. I had to stop them after they barely heated them and there was no actual sign of toasting at all.

Spent $22 just to get two toasted bagels with cream cheese. It took them six bagels to do it. The bagels were nothing special, and I don't think they asked if I wanted them toasted or not, because they don't want to do the "work" to put them in the toaster.

*Edit I was completely calm and polite during the entire exchange, but I knew they would somehow blame my behavior. If they had wanted to give me a "refund" they could have simply replaced the bagel when I brought it back instead of making me repurchase them. And while they did show me after the fact that the bagels were toasted on request, they also saw that was covered up by condensation due to the rain.

Imagine waiting for a review and for a customer to leave, unsatisfied, to then offer a refund.

My love for Ruby’s bagels goes beyond all reason. Hands down the best bagel you can get outside of New York. While the guava cheese bagel is what I dream about, everything I’ve tried is amazingly delicious.

It’s a bagel…taste like any bagel from a bag. Cream cheese is also pretty bland. No seasoning on one side of the bagel either. Make sure to ask for it extra toasted since asking for it toasted just warms it up essentially. Highly disappointed.

Vegetarian options: The area near the windows smelled strongly of cooking bacon which might not appeal to vegetarians but their full menu contains little meat.

Parking: Parking is shared by all the vendors in the food truck park. There were around 7 vendors but only Ruby's was open when we were there. Parking might be tough when the weather is nice or more vendors are open.

There is a sign with a QR code asking you to register your car for free parking - they ask for your plate number, your email and which vendors you're there for (there is an "I don't know yet" option).

Rosemary seasalt bagel with plain cream cheese, untoasted (apparently, wasn't asked and assumed it would be toasted).Entire tub of cream cheese, whole spice bottle of rosemary leaves, saltier than the dead sea. Basically everything in excess. Some may like that, but wasn't for me.Edit to reply to owner: I have had fresh bagels before, in Manhattan. I assumed this wasn't fresh as it *wasn't warm* and didn't have that characteristic crisp outside and soft center that precludes the need for toasting. It was soft/spongy throughout. The main reason for the 2 star review is the flavor.
