Don’t get me wrong, the bagels are decent. It’s far from the best bagel I have ever had in my life but it is probably the best in Milwaukee. However, someone at Ruby’s needs to spend a month in NY working in a bagel shop or they need to import a grumpy 65 year old New Yorker to show them how to run a bagel shop. For starters you need a second person up front. This morning there were ten people waiting in line to order while the person up front was ~casually~ making a matcha. There were 13 people in line when they strolled to the back to get more everything bagels. You NEED a sense of urgency. It was 15 minutes from the time I got in line until they took my order. Then tack on an “average” of 15-20 minutes because they “aren’t a fast food place”. While you may not be, you aren’t a sit down place. There are 6 bagel options, 5 hot sandwich options, and some cream cheese/butter options. It’s not a complicated operation. For goodness sakes the bagels are already made. You should have eggs cooking at all times, you know the sandwiches are coming when the line is 10-15 people deep. You are not fast food, we all know that. But what amounted to a 45 minute wait time today isn’t sustainable for what should be a 10 minute total wait. You need someone with hustle. If you could just get orders taken and food out the door your customer satisfaction and profits will go through the roof.

Loved the Classic Lox sandwich. We walked over from our AirBNB for breakfast and we were very pleased. They were busy but it was plenty worth the small wait.

I can’t understand some of the lower reviews on here. The bagels here are phenomenal! I used to drive all the way from Tosa to the food truck to get the rosemary sea salt bagel because there was nothing like it closer. Now, I’m happy that there is a shop closer to home where I can stop by more regularly. The little alley between RBs and Venture is also a super cute spot to read a book while I enjoy my fresh bagel!

Great bagels tried the hot mama and it was delicious. Worth the wait- bring a book or a good phone game to play
Had a friend recommend Ruby’s and it did not disappoint! I got a simple cinnamon cranberry with plain cream cheese and a cold brew. I thought the texture of the bagel was absolutely perfect. Not overly chewy, perfectly crisp crust and very flavorful. Best bagel I’ve had.
Employees were also very sweet and quick. They handled the Saturday crowds with smiles.
Dining area was a bit tight so I wouldn’t plan to be able to sit down to eat on a weekend. I hope they continue to have success in order to expand!

The bagels are very good, but the service time is definitely slow, expect a minimum of 20 minutes wait even for a plain bagel with cream cheese. Absolutely worth it if you plan ahead but don’t go in expecting to be in and out quickly.

These are the worst bagels I ever had in my life and I'm 71 years old never offered the option to buy a half dozen for less than four doesn't matter. I will never be back there again if people think these are good bagels and I'm gonna open a bagel store and buy them from the grocery store in fact, out by day-old bagels from the grocery store now still taste better than these. It was supposed to be real good bagels, people that are eating his bagels and think they are good they don't know good bagels like I said if they think these are great, I will open a bagel shop and use grocery store bagels. That'll taste better.
