Every dish was so delicious. The complimentary rolls were perfect combo of soft and crisp browned top with a light dipping oil. The salads were creative and fresh. French onion soup has such a depth of flavor served with perfectly toasted breads smothered in cheese. Grandma’s meatball dish was superb. The owner and staff were attentive and seemed to enjoy treating their guests to a great experience in dining. I enjoy going out and being inspired to prepare new dishes at home to remember our great memories while traveling. Thanks for the care and creativity displayed in your menu selections. We look forward to going back for the salads and to try the pizza.

We were in Jackson Hole at the end of September. We couldn’t get into any other restaurants, so we ended up going to Paulies. The reviews were mixed, so honestly didn’t have high hopes, but we were very pleasantly surprised. Food was top notch. I had the elk t-bone. It was one of the most delicious steaks I’ve EVER had in my life. My wife was as pleased with her dinner as well. I would highly recommend it. Much better than the restaurant next door, and 1/3 the price

Our visit to Jackson Hole was highlighted at this restaurant. We stumbled across it one evening looking for good food and good service. We didn’t have a reservation but the hostess graciously offered a seat at the bar which we didn’t hesitate. Brock took excellent care of us, making suggestions and answered questions. The meatball was excellent, a great appetizer to share. The beet salad was also enough for two. We liked it enough to make reservations for the following evening in the dining room. The owner is in the dining room checking on guests, plus the manager is visible as well. It is obvious the staff is trained well, helpful to each other. It is such a calm place! Thanks for making our visit great.

I can’t speak to the traditional Italian dishes on the menu as I was there for a burger but I praise what I had. Cashier was quite friendly and efficient. Burger was correctly cooked to order and had excellent nuance and umami. If I have one again I’ll request a traditional garnish of lettuce, tomato and onion which would have helped burger. Pickle was also missing but the side of fries was huge!

We had a horrible experience at another Italian restaurant, Orsetto, and decided to try Pauli’s. Excellent customer service and great food! The owner came by and checked on every table and their food. Takes great pride is his work and the culinary experience he provides to his customers. We are definitely coming back! Best lasagna I have ever had!

Service was exceptional and Parker house rolls + chive oil were delicious. We had high hopes as the restaurant came highly recommend; however, the entrees were average and, in our opinion, rather overpriced. We left disappointed.

Amazing food. I had the Ribeye med rare and my girlfriend had the Lasagna. Both entrees were amazing Brock was very attentive. Aaron the GM told us about the history of the place. Trust me this is a gem you should find the time to eat here you won’t be disappointed!

Looked for a great steak whilst in town. Locals recommended Pauline's. Its down stairs from the million dollar cowboy bar and kinda out of the way. The sign shouts italian, and we were not sure if the steak would be great. Boy were we wrong, the best steak I've had in ages. The owner / chef came out to see how the meal was. 100% recommend

While visiting Jackson Hole area my wife decided to look for a good Italian steak resturant. My wife and I have traveled the world and the best steaks I have ever enjoyed have been in Italy. We choose Paulies because they use Resy and the reviews were very good. This resturant is located below the world famous Cowboy Bar in down town Jackson and shares the same entrance. Down a couple of stairs and along an historical lined photographic hallway puts you into a romantic oasis away from the crowds. The menu is full of western delights. It reminded me a lot of the Italian steak house that is more common in Florence, Italy. Tables were 6-10 foot away from each other and every server wore masks. Our server was a polite gentleman named Ramon who provided quality suggestions and took our orders. We began with a round of Mubec wine to stimulate our palates in addition to two Plain Jane salads which were delicious. My wife was served stuffed peppers and myself the tenderloin that was seasoned to perfection. I am uncertain if I have dinned on more delicious steak. We completed our meal with a chocolate moose desert that was fantastic. Bottom line, if you are looking with a fantastic resturant in the middle of Jackson Hole, with food that will make you want to extend your vacation and extra week, don’t hesitate choosing Paulies.
