We had a great experience at Castello Italiana in the Fairmont Banff Springs. Our waiter David was incredibly friendly and provided exceptional service. He’s honestly the best waiter I’ve met across all the Fairmont hotels I’ve stayed at around the world. The shrimp was also amazingly tender. Highly recommend!

If you are staying at Fairmont banff or just in the area head to Castellos Italian restaurant, Its perfect. Friendly staff, extremely clean fantastic atmosphere. Perfect menu. And good prices. Give it a try we will definitely go again.

I went with my teen son and it was phenomenal! Everything was great! I have celiac and don't eat meat but the server was very accommodating to my allergies and preferences. Will go again!

Our server and the appetizers were amazing. Lasagna needs a rethink. The sausage was very course and chewy. Would be better if they didn't use it at all. The presentation is also weird. Would be better served as a slice Nonna style in tomato sauce on a plate, instead of like a souffle.

We decided to go to Castello's as our choice for a nice dinner in the Fairmount Hot Springs Banff. Our server David was wonderful . He was actually from our home town in Ontario so we had great conversation. He was so pleasant and explained our menu options. We decided to do the “ Nonna's Sunday Dinner @ $52 each ($104 couple) It was a very very small portion of Rigatoni each and 3 tiny portions of a bowl combined Short Rib, Spicy Sausage and Meatballs which we shared. It was honestly just okay and not worth the price at all. For $104 for Rigatoni and some meat we were still hungry . The Ceasar salad was good . The Burratta came with a more Salsa Tomatoe mixture as apposed to halved tiny tomatoes in an olive oil. Did not come with any bread crisps to put Burrata on I asked for those and received 2 little pieces? So big question would we return , unfortunately not..Portions were so small for our main meal food choice for the price. Restaurant itself was nice but busy and noisy as tables were very close together near window view.

I made reservations for dinner Friday night were seated in the bar area. The bar is terrible... especially for the price point. The bar area feels like you are eating in a coat closet. It is cramped and the ambiance is not good. If you're not in the main restaurant I would suggest going someplace else for dinner unless it is for something casual... in which case there are better places to go either at the hotel or in Banff. Food was fine and the staff was friendly.
Excellent food, wonderful service and a perfect place to celebrate our anniversary. Would definitely go back for a special occasion!

⭐⭐⭐⭐⭐ Exceptional Dining Experience at Castellos We had an outstanding dinner at Castellos! The 18 oz Ribeye Peperonata was phenomenal — perfectly cooked Alberta premium beef with rich, smoky preserved peppers and a flavorful house steak spice. The portion was generous and absolutely worth the price. The Cacio e Pepe was another highlight — silky gnocchi lunghi tossed with pecorino romano and just the right amount of black pepper for that classic, comforting flavor. Beyond the food, the service was excellent — attentive, friendly, and incredibly professional. Our server made thoughtful recommendations and ensured everything arrived at just the right pace. The atmosphere was warm and elegant, making the whole experience memorable. Highly recommend Castellos for anyone visiting the Banff Springs — a perfect blend of fine dining, local ingredients, and top-tier hospitality.

We had a reservation and were taken to our table promptly and given seating with a beautiful view of the mountains. Our server Mica was excellent. Made us feel welcome and very friendly We share the veal parmegian. Very good seasoning on top! Also had the roasted carrots. Great atmosphere.
