“We had a great experience at Castello Italiana in the Fairmont Banff Springs. Our waiter David was incredibly friendly and provided exceptional service. He’s honestly the best waiter I’ve met across all the Fairmont hotels I’ve stayed at around the world. The shrimp was also amazingly tender. Highly recommend!“

“My husband and I had reservations at a different steakhouse for our wedding night- but when we arrived they had closed for Reno’s and didn’t even call us. We ended up choosing the Bluebird instead- and we were blown away! The best food we’ve ever had, hands down. Thank you for making our wedding dinner so special and delicious- and for getting us a last minute table!“

“Very fun spot with great food, especially after a nice day on the slopes. Definitely get the squash with the ricotta and the beats as appetizers. Both have very unique and exciting flavors and textures that’ll make you wow. The pastas are pretty solid, nothing crazy. The spicy rigatoni was my favorite of all. I found the Cacio e Pepe and mafaldine al limone a bit bland.
The pizza is the stand out dish here. I usually don’t love restaurant pizza, especially in Canada, but they really nailed it. Airy, crunchy, charred dough with crisp undercarraige and a Detroit style soupiness with a nice punch of salt to give it that perfect saucy tang. I’d give the pizza an 8.3.
Hard to get a reso here so either make one in advance or try to walk in.“
