Wow, what a special time we had at Sauvage! It was the most excellent way to celebrate our 35th wedding anniversary. From the moment we were greeted at the door, we were in for a magical evening. The Hunter tasting menu was very creative and delicious, every dish was so good, and each of the unique foods and flavours were balanced perfectly. A truly special culinary experience. The attention to all the details (music, atmosphere, beautiful dishes, amazing chef-created food, etc.) was above and beyond. And, to top it all off....on the walk home there was a congratulations card in my pocket, signed by each of the staff. Thank you to everyone at Sauvage, looking forward to next time!

Cute establishment. Perfunctory service. Food not worthy of praise. Chef Tracy Little has a toxic attitude & responds to feedback like a bad tempered hungry child. I'll never dine here again.

We went to Sauvage to celebrate my husband’s birthday. We did the tasting menu plus the two add-on dishes. The food was very good, aside from one of the add-ons which was basically a plate of foamy cheese with about four small croutons, not enough to really enjoy the dish. I will say though, I got the juice pairing and it was a thoroughly unenjoyable experience. Almost every juice was a similar very savoury drink to compliment the dish, except it was like drinking broth or vegetable purees all evening. One was so awful I look one sip and didn’t touch it the remainder of the course. I would highly recommend steering clear of the juice pairings, which is unfortunate because I think having enjoyable non-alcoholic drinks is something every restaurant should prioritize.

This is a charming restaurant located in a secluded area. If you enjoy culinary experimentation, this is an ideal destination. The owner-chef is highly creative and utilizes natural ingredients. The service is exceptional, and the food is truly remarkable. While it may be a slight distance from Calgary, the experience is well worth the effort.

Our expectations were high since a friend has recommended the place but it seems like the tasting menu at that time was a miss and there was no star dish for us. The main course, venison, was overcooked and we were confused about the cabbage dish with miso and caviar. We did like the bread/butter, soup and the dessert. Will probably be back next year to give it another chance.

The attention to detail! From the decorations of the restaurant to the choice of music. It was such a lovely environment. The food is a work of art, very creative & well thought out. Beautiful execution, highly recommend for the unique experience in Canmore.

We had an amazing time at Sauvage and highly recommend it to others. I had the juice pairing which ended up being so much more than I expected in the best possible way - truly enhanced the flavors of each dish -

1. Rabbit pairing was lilac and spruce spritz
2. Scallop pairing is a peach and juniper juice
3. Boar pairing is smoked chaga kombucha
4. Venison pairing is Saskatoon, Lovage and Grains of Paradise
5. Dessert is Seabuckthorn and Carraway

Some items we had never even heard of - so it was a delightful process of discovery. The service was warm and attentive, with great communication from management before and after we came in. I can only imagine the time and energy it must take to create the ever changing menu. It will give you a true sense of place to eat here.

This place is a Canadian treasure and I truly hope it lasts for many years to come.

Six of us enjoyed a 3 course meal with seared scallop and cauliflower starter, succulent venison as main with foraged mushrooms and a wine poached pear to finish.
Service was knowledgeable and timely. The room cozy. We loved our experience. Highly recommend this gem.

I can't recommend Sauvage highly enough; if the Michelin guide operated in Canmore, Sauvage would certainly be featured. My husband and I had the seven course vegetarian menu. Truly everything was amazing. Sauvage is a must stop for any foodie visiting the Banff area.

Sauvage has a great tasting menu. You can do 3, 5 or supplement to 7 courses. Have a good wine list and also offer to do wine pairings. The food and service was excellent, We had a really great evening dining at Sauvage.

WILDLY expensive, horribly slow, and I left hungry. Not remotely worth the time or money.

The room was scorching, yet every course was served cold. And only half of them intentionally...

The bread was probably the best part? Yikes! 3 out of 4 scallops were very undercooked. The venison was pretty good. The pre-dessert was delicious. But oddly served in a dish that made it look like a candle or hand cream? Kind of unappetizing. Everything else was pretty bland. Far more misses than hits.

And the loose toothpicks on a dish in the bathroom was just gross. Is anyone actually using those??? Those should be wrapped, in a dispenser, or both!

$510 (pre tip) for 4 people?? For that?! I really can't recommend it.
